But like the first time with another recipe there is acid, this time it is not felt so much, but I want absolutely no acid. Is it possible with sourdough?

Initially, I bought it, hurried ... I read on another site that it is difficult to grow the sourdough myself, so I decided to buy it.
She lived with me for a week, I fed her every day with wheat flour and baked bread twice (this is the second). As a result, I threw it away, decided it would be better to grow it myself than to keep it grown from something I don't know.
