Recipes for Philips HD9015 / 30 and Philips HD9016 / 30 Bread Makers

I bake exactly according to the attached recipes, weigh on scales (everything up to grams) - conveniently and accurately. At first I tried to measure it with a regular glass, but due to the different density and moisture content of the flour, the result could be different.

Notes:
1.the ratio of dry to fresh yeast 2.5 - I like fresh yeast better
2.I always sift flour
3.Pay special attention to the water temperature (see recipes)

I bake according to programs:
No. 1 always turns out excellent - with whatever fillings I have tried - nuts, raisins, spices, herbs ...
No. 3 Borodinsky is very tasty - after baking Borodino bread you need to lie in a towel for 1-2 hours, preferably more, and never cut warm - the crumb will roll into lumps and stick to the knife
No. 8 excellent bread, made from flour "French thing" whole-grain wheat (wallpaper), tastes best with additives (for example, seeds, etc.)
No. 12 is actually a muffin (unfortunately very high-calorie, but tasty) necessarily with nuts and raisins

Where I buy the ingredients - mostly Globus and Auchan / Attack, I bought peeled rye in a 45 kg bag (cheaper and fresher).

Here is the quantity by weight 1000 g (resulting in about 900 g)



Program No. 3 Borodino bread
water 290 ml
malt 24 g
natural apple or dark wine vinegar 15 g
vegetable oil 27 g
salt 12 g
dark honey (for example, buckwheat, but you can use any) 65 g
chopped caraway seeds 1 tsp. ~ 3 g
chopped coriander 1.5 tsp. ~ 4 g
rye flour 250 g
bakery flour 250 g
dry yeast 8 g / fresh 20 g (dry it is better to measure with a measuring spoon: 2 tsp.)

When the first batch starts (after 30 minutes), I help a little with a wet wooden spatula so that flour does not accumulate in the corners. If you use fresh yeast, then the roof is fine. If you use dry yeast, then the bread turns out to be denser - be sure to make cuts with a knife 2-4 lines (be careful not to scratch the teflon coating !!!), otherwise the roof will "rip off" and it will not be very convenient to cut off the bread. After baking, I wrap it in a towel and wait at least 1 hour (preferably a few hours).
