Pearl barley soup with corn and sweet pepper

Ingredients

2 chicken thigh broth 1.5 liters
Pearl barley 4-5 st. l
Large carrots 1 PC.
Medium onion 3-4 onions
Red sweet pepper 1 PC.
Canned corn 150 gr.
Medium potatoes * 3 pcs.
Salt, pepper, bay leaves, herbs taste

Cooking method

  • Boil broth from 2 chicken thighs. Strain, disassemble the meat into pieces. Bring the broth to a boil, add the pearl barley (pre-soak for 2-3 hours). Once the pearl barley is soft, add the diced potatoes. In vegetable oil, fry the onion, grated carrots and pepper, cut into strips. When the potatoes are ready, add meat, frying and corn to the soup, cook for 2-3 minutes. Add peppercorns, bay leaf and herbs (I have Provencal herbs), turn off the fire. Let the soup steep under the lid for 10-15 minutes

* There are no potatoes in the original. Instead, you can add more barley. You can also cook the lean version, without chicken

Elven, Len, and I liked the supik! I just discovered for myself that pearl barley can be tasty (at school they prepared some kind of cyanotic lump!)!
So I'm now collecting barley recipes! And the lean version will definitely be delicious!
