Thanks for the recipe, I did it yesterday !!!
have questions...
there was no kolobok. Should it be on sweet bread mode?
the dough was like a muffin - it dangled and everything, nevertheless, the bread turned out delicious, but not high.
Should we add flour to the bun, or should this bread be like this?
Qween
Nubira , I actually adapted this recipe for a bread machine. In the original - flour 250 gr. And the dough is like homemade sour cream. The honey cake, which is in the photo, contains exactly the amount of ingredients indicated in the recipe. The dough is not a bun, but it is not liquid either. Looks like "Delicious Easter cake" from Elena Bo ... Slightly thicker than homemade sour cream.
What kind of oven do you have? And in what mode did you bake? I have "sweet bread", the one that is by leaps and bounds.

Please, explain for the gifted, why is there soda in the honey recipe? I heard somewhere that soda and yeast in baked goods "are not friends" ... For a long time I put my eyes on your honey, but I forgot to ask about soda all the time ... And if you don't add soda, the result will be worse ?
Qween
Crochet , and I have never read that soda is not friendly with yeast. I have quite a few recipes for yeast and soda. I read exactly that soda does not allow yeast dough to peroxide (convenient for storing ready-made dough), and the like. Besides, honey dough loves soda.
I didn't bake this honey cake without soda.

Here's how I didn't understand how a large amount of honey can not very pleasantly affect the structure of the dough:

Nice inside, despite a lot of honey, and decent crumb

I didn't have any problems either with the soda or with a lot of honey. This honey cake is "juicy" (I don't like it at all, and I can't eat dry pastry)
Kolobok, when kneading, no. The dough is thinner.

I wish everything worked out.
In the photo, the honey is exactly according to the recipe I wrote.
Crochet, can we be on "you"?

Thank you so much for your answer, so I'll try with soda! In the coming days I will try.

THANK YOU !!!

Has swung at a meadichok, is already kneading, but there is no salt in the recipe? I put 0.5 hours at my own risk. spoons ...
Qween
Crochet what a beautiful honeymooner !!!!!!!!
Even prettier than mine!
kleskox35 , turned out to be a honeymooner?
kleskox35
Babeing him all evening yesterday! I didn't want to come up and that's it! I threw in a teaspoon of dry yeast and splashed the brandy, kneaded as much as 4 times ... in short, put it on the timer so that I would bake it by morning and go to bed! Here is the result in the morning, the husband got drunk from the smell himself, the taste did not have to be awakened.

What was it he was capricious, did not want to approach. The yeast may have failed. Maybe a lot more cognac.

And at least it turned out beautiful, or did it not rise? And then the photo is not clear.
kleskox35
Yeast on the eve perfectly raised a simple dough, I don't know, but strong alcohol, on the contrary, helps, my grandmother taught me, she worked for many years in the bakery ... in the morning it got up completely and judging by the speed of eating it is very tasty, just a long process walked.

But you have such a light one, but for some reason I turned out dark? I don’t understand why?
By the way, at first my dough wasn’t so hot as it approached, baking had already begun, but the honey cake still didn’t "grow", but then (towards the end of baking) it grew up and got a beautiful "hat" ... here.
kleskox35
Attempt number 2, some kind of riddle, he just does not want me to fit! I checked the yeast with a lush cap and bubbled ... in short, I put it in the cartoon and there, with periodic heating, it stood from 11 am to 9.30 pm .. then it baked for 65 minutes. turned out the same! Tall, lush and tasty.
Qween
kleskox35 , well, finally, you have this honey! I am very glad. To health

But my meadichok, though on dry yeast, ground the raisins, but this is my mistake, I forgot to turn on the "with raisins" mode and sprinkled about halfway through the batch. I added about 50 grams of flour - it was a very thin dough. A day after baking, it became even tastier.

But salt, in my opinion, is still not enough
Qween
Vlad426, an excellent, tall honeymoon you have turned out!
If salt is required, then of course add.

Khryukin's Chronicles
An excellent honeymoon, no flour was added, everything was exactly according to the recipe. True, in the process of proofing it did not rise a bit, but in the process of baking it did not disappoint! It turned out to be tall, lush and beautiful, dark inside, as someone wrote here. We think it's because of the cinnamon + honey.
Yes, after the Sweet Bread program, they baked for 20 minutes in the baking mode, since it was raw. We have Delongy755

Christmas tree
Tell me, how much dry yeast is needed for a honey cake? I bought the stove closer to the New Year and so far I only use dry yeast.
Qween
Christmas tree, I don't bake with dry yeast. Probably 1.5 tsp will be enough. ... I proceed from the fact that the instructions for my HP indicate that 1 tsp is needed for 400 g of flour. yeast. So another 0.5 spoon, I think, is enough.

Tell me, how much dry yeast is needed for a honey cake?
Christmas tree, I put 1.75 tsp. (a spoon from HP is naturally measured) ... Although perhaps 1.5 tsp will be enough. as above advises Anya ...

For the future, it will suddenly come in handy ... To count fresh yeast into dry yeast, you need to divide the amount of fresh yeast by 3.

Baked this Medovichok for his mother-in-law (grandmother), ordered something delicious. I tried it, it’s delicious, my grandmother tried it, she didn’t like it. He took a sip of beer and went to take a nap. I wake up, and a quarter is left from the tasteless honey))))) Here's your grandmother and the tasteless honey)))) The recipe is cool, tomorrow the children will come, I will repeat!
Essenia
Thanks for the recipe! I baked everything exactly according to the recipe, but it didn’t rise very well, and even looks like a black man. Maybe this honey (artificial) burns? I see the topic has not been written for a long time, but I still brought my thanks to the author!
Albina
Great: not a troublesome recipe
Essenia
Good day. I baked the cake several more times, but it does not fit well and is so brown (everyone asks if there is any COCOA), I took both artificial and natural honey, although I replaced cinnamon with vanilla (we like it more). Very easy to prepare. Happy baking everyone!
