Ingredients

Flour 640gr
Salt 9 g
Water 310gr
Sugar 50gr
Pressed yeast 8 g
Egg 70 g
Butter 82.5% 70 g

Cooking method

  • Dissolve yeast and sugar in water (slightly warm)
  • Mix flour with salt
  • Add yeast cocktail and eggs
  • Mixed with a hook for 4 minutes, then add butter in a spoon, the next portion after completely mixing the previous one. Cover the bowl with plastic wrap and place in a warm place for 2.5 hours with one bump in the middle of fermentation. The dough is slightly sticky, but it is very convenient to work with it with a small dust of flour.
  • Any filling, your favorite!

I accidentally saw a program called "Honest Bread" (issue 17 later I found out), did not really look closely, since the topic was about pies, well, who does not know how to bake pies !! In every family, the hostess has a couple of favorite recipes. But my attention was attracted by the name - "Downy"
And yesterday, early in the morning, I plucked a cockerel, boiled it in a fragrant broth, boiled caesar's eggs, fried onions and first thought about pancakes with meat. But then the name came to mind again ..., strained, found this release and plumped into the kneader at once a double rate. Deja I have 6 liters, and so the dough has grown with a hat !! Gave proofing for at least 20 minutes after molding and before planting in the oven smeared with a mixture of yolk and olive oil.
Now impressions !! My home (spoiled baked goods) were delighted. I served these pies with broth (I squeezed garlic into a plate and a little greens) from that very cockerel ...

From the double norm I got 26 !! pies (60g each) and a large closed pie (24 cm shape) with curd-poppy filling.
The pies absolutely live up to their name, they are airy !! Now I have another favorite recipe in my piggy bank !! Recommend!!!

These are the "sweet" versions of "downy" pies I prepared today.
Streisel - 20gr oil drain
- 20 grams of sugar
- 40 gr flour
Mix everything with your hands. We lower the blank into a beaten egg and then into crumbs.
