Whole-grain wheat bread LUKYanych

Ingredients

Dough (wheat 100% hydration) 200 BC
Wheat flour h. 200 BC
Water 80 g
Salt 3/4 tsp
Sugar 1 tbsp. l.
Ghee butter 10 g
Egg (protein) 1 PC.
Dried onions 20 g
Egg (yolk) for lubricating the top of the product 1 PC.
Sesame seeds for sprinkling option

Cooking method

  • Knead the dough from the ingredients for 15 minutes (HP). The dough is a little sticky.
  • Fermentation at room temperature for 90-120 minutes. After the expiration of the time, the bun is divided into 8 parts. We roll them into balls and put them in a form greased with non-stick grease (or oil).
  • Proofing for 60-90 minutes. Before planting in the oven, grease the bread with yolk and sprinkle with sesame seeds.
  • Bake at 200 * C for the first 10 minutes,
  • then reduce the heat to 180 * C and keep the bread until golden brown.
  • The total baking time is 30-35 minutes.
  • Cool the finished bread on a wire rack.
