Mimosa curd balls (you can use the ball mold)

Ingredients

For the test:
Sugar 6-8 tsp
Egg C-1 2 pcs. (about 100 gr.)
Semolina 100 g
Flour (wheat or corn) 2-3 st. l. (20 gr.)
Canned peaches 200 gr.
Cottage cheese of any fat content (not pasty) 500-550 gr.
Vanillin
For sprinkling:
Corn sticks 30 gr.

Cooking method

  • It prepares very quickly. All cooking takes about 30 minutes, along with cooking. It is important to have cottage cheese of this consistency. Mimosa curd balls (you can use the ball mold)
  • Not a paste or watery. It is also imperative to mix the dough with a spoon, and not with a mixer-blender-combine. Mix! Do not beat or rub. Without fanaticism. It is delicious to take corn or rice flour, but it will also be delicious with ordinary wheat!
  • Place the peaches on a sieve and drain.
  • Mimosa curd balls (you can use the ball mold)
  • Put everything for the dough into a bowl and mix with a spoon.
  • Mimosa curd balls (you can use the ball mold)
  • Pour water into a saucepan and add salt and sugar. It should taste delicious. Who likes sweeter, then add more sugar. Boil the water. The water should be so that the balls float in one layer, completely immersed in water with a "head".
  • Next, we will sculpt balls with wet hands. It is necessary to constantly wet your hands and smooth the balls. Better to do it in medium - not very large, but not very small either. About the size of a child's palm. It's good if you have a special device for this. I only dream of him so far.
  • Mimosa curd balls (you can use the ball mold)
  • Put peach pieces (not whole!) In the middle. Take a peach with a teaspoon (soft peach), crushing it a little with a spoon so that there are no corners. The dough is perfectly molded and smoothed with wet hands. Using a spoon (no need to throw it into the water, burn and splash), immerse the ball in boiling water. It is best to sculpt and cook in batches. When the balls float (no need to stir), boil them for another minute.
  • Mimosa curd balls (you can use the ball mold)
  • Then remove it with a slotted spoon and let it cool slightly. While the party is getting cold - we sculpt the second and cook.
  • Mimosa curd balls (you can use the ball mold)
  • Use a pusher to grind the corn sticks into dust in a deep bowl.
  • Delicious corn sticks with lemon sprinkles! ME!
  • Now we throw the balls by hand into a bowl and roll in corn sticks. You can double-bread and let them sit for a while after the first sprinkle.
  • We put it on a plate. Serve with peach juice.
  • Mimosa curd balls (you can use the ball mold)
  • Very tasty and healthy!

Note

Highly recommend for kids and adults! Especially tasty freshly cooked, as the crunch of corn sprinkles. The cooled ones are also tasty, but the sprinkles no longer crunch.

Pineapples are fine, but chop a little. So that the filling lies in an even lump and the corners do not interfere with molding.
Thanks for attention

Irink, I made them. She did it completely lazily. Not as beautiful as yours, it turned out, but very tasteful.
1. I did not roll in corn sticks.
2. There were no peaches, but there were dried apricots from compote. Left her.Not as tender and not as sweet as peach, but waste-free. I tried to wrap a whole dried apricot and cut it. The whole "shoots" when biting through. For a couple of "mimosa" dried apricots were not enough, stuffed with frozen blueberries. Delicious too. Blue "mimosas" are funny
In general, I have done and will do. Thanks for the delicious recipe!
