Ingredients

Curd 9% 460 g
Medium eggs 2 pcs.
Sugar 3-4 tbsp. l. without top
Vanilla sugar 1-2 tsp
Wheat flour 3 tbsp. l. slightly riding
Semolina 3 tbsp. l. without top
Salt to taste
Deep fat oil
Flour, crackers or any bread mixture of your choice
Fresh berries and fruits, dried or frozen, dried fruits, goji berries for filling how much fit
Jam and sour cream for serving

Cooking method

  • I thought to make "Kiev style cheesecakes" according to a new recipe for me, and then I came across a newly acquired ball-making machine. Conscience woke up, and I replayed the recipe. Here's what happened!
  • Preparation
  • - Rub the curd through a sieve. (I took "House in the Village" and "Prostokvashino"). I pressed through a press for making puree, it would be better through a sieve.
  • - Add eggs, slightly mixed with a pinch of salt, sugar, vanilla sugar, flour and semolina to a bowl of curd. Knead the dough well, like for cheesecakes.
  • Curd balls with tasty and healthy fillings (mold for making balls or without it)
  • - Open the baking dish and grease liberally with oil, including the elements for extruding the recesses. You can drop a couple of drops of oil directly into the recesses and rub with your fingers.
  • - Take a small amount of dough, roll it a little with both hands oiled with vegetable oil, shaping a ball and put the dough in each cell, then press it down to form a notch. The recess must be almost completely filled.
  • - Press down the dough well with the raised parts of the mold. Carefully separate this part of the mold from the dough. Place a variety of healthy fillings of your choice in the holes.
  • - Place the dough in the remaining free slots in the same way as described above.
  • - Connect both parts with the grooves very tightly, shake a little, put on the table and very carefully, controlling the process, open one part of the mold. The balls should form and stay in another part of the mold.

  • - Sprinkle the balls directly in the mold with some dry breading mixture (crackers, Japanese breading mixture, semolina, flour, corn done ...), then carefully transfer them from the recesses onto the table, touch the seams with your fingers, sprinkle with the mixture on top and Spoon into preheated deep fat. The shape of the balls can be adjusted by hand before frying.

  • - Deep-fry for at least 4-5 minutes, turning the balls over and pressing them to the bottom of the saucepan.

  • - Place the balls with a perforated spoon (tongs crinkle the dough very much) on a paper towel or napkin to absorb the excess fat and serve with sour cream and jam.
  • The fillings that I usually add to sweet cheese cakes and will now add to these balls:
  • - Dried apricots and prunes, slightly soaked and dried.
  • - Dried or fresh cherries, cranberries, plums, blueberries.
  • - Layered marmalade - very tasty plum or apricot.
  • - Slightly soaked goji berries.
  • - Nuts with raisins.
  • - Fresh cherries sprinkled with starch and sugar.
  • Yes, and I also realized that the filling should be rolled tightly in the shape of a ball according to the size of the squeezed groove, then it fits perfectly, and when cut, there will be no empty space.
  • Bon appetit with homemade tea!

Note

The dough was just perfect for this fixture. Poluchilis deep-fried cheesecakes. But please note that the cottage cheese was dryish, fatty and dense. In no case, do not break the cottage cheese with a blender, you are tortured to add flour.
The mold pleased me, and the process, in modern terms, is cool. With the help of hands, all the same can be done, but with the shape it is more interesting. And the dough does not need to be weighed to form perfect identical balls. I'm going to continue my experiments!
