Ingredients

DOUGH:
Flour 90-100 g
Pumpkin 250-300 g
Sugar 200 g
Eggs 3 pcs
Baking powder 1 tsp
Ground cinnamon 1 tsp
Ground nutmeg 1/4 tsp
Ground cloves 1/4 tsp
Ground cardamom 1/4 tsp
Salt 1/2 tsp
Walnuts 0.5-1 glass
Powdered sugar (in the case of a roll)
CREAM:
Vanilla curd cheeses for children 1-2 pcs. 90-100 g each
Sour cream 20-25% non-acidic! 200 g
Butter 50 g
Sugar 2 tbsp. l. without top
Gelatin (with liquid sour cream) 1 tbsp. l.

Cooking method

  • I continue a series of recipes from my favorite pumpkin.
  • I was going to bake a roll, and as a result, a very nice cake came out. He has very fragrant soft cakes, a little dense, since there is little flour and a lot of pumpkin. After impregnation, everything is harmonized, the pumpkin is almost not "heard", as the guests said. There is a slightly gingerbread taste, which is not surprising with such a set of spices. If you do not perceive any kind of spices from the proposed ones, then you can exclude it without prejudice to the taste.
  • The recipe for slamzil dough from the "Grocery School", my cream, I often make this, using the indicated products in different proportions and trying for sugar.
  • Preparation
  • - Cut the pumpkin into pieces, put in a glass bowl, cover with cling film and bring until soft in the microwave for about 8-10 minutes at 600 W. If the pumpkin is dry, then you can add a couple of tablespoons of table water to the bowl. Drain the juice released from the pumpkin, grind the pumpkin itself until puree with a blender. Refrigerate. Add 2/3 cup of ready-made puree (170-180 g) to the dough.

  • - For the dough, beat eggs well with sugar and salt until fluffy dense foam and sugar is completely dissolved. If you want to make the cakes more fluffy, beat the whites with sugar separately. I used the "Chef's" Tupperware mixer for whipping - it was whipped well.
  • - Stir the pumpkin puree into the beaten eggs with light movements from top to bottom, being careful not to sediment the mass. It is very good to do it with a whisk from Tupperware, I did not even expect.

  • - Sift flour, mix with spices and baking powder.

  • - We also carefully add the flour mixture to the pumpkin-egg mass, gradually adding it. At this point, the oven should already be preheated to 180 degrees.
  • - Grind the walnuts to small but tangible pieces.
  • “I wanted to make a roll, so I used a Tupperware baking mat to get one large rectangular crust measuring 35x32 cm. If you don't have a mat, you can use good baking paper. Pour the dough onto the rug, smooth with a spatula and sprinkle with nuts. We bake our cake at 175 degrees for about 12 minutes.

  • - If you want to make a roll, then sprinkle a clean towel with plenty of powdered sugar and immediately turn the finished cake on the towel. Roll it into a roll using a towel and leave it to cool in the towel.

  • - I decided to make a recipe in the form of a cake, because I used homemade low-fat sour cream, and it turned out to be thin, and I didn't have time to wait until the cream with gelatin hardened.   • - Stir the sour cream at room temperature and softened butter, add mashed children's curd cheeses and sugar. Knead the cream at low speed until completely homogeneous.
  • If you decide to make it in the form of a roll, and the cream will turn out to be liquid, which is not surprising given the current quality of sour cream, then add gelatin to the cream.
  • To do this, take two tablespoons of cold water, add one tablespoon of Dr.Oetker, let it swell a little and heat up to 60 degrees until the gelatin is completely dissolved. I sometimes do this in the microwave for 40 seconds at 360 watts. In the process, I take out and mix once. After that, add the gelatin to the cream, mix well and let it thicken in the refrigerator.
  • - We release our roll from the towel, remove the paper and coat with cream. Wrap the roll again, cover with cling film and put in the refrigerator.

Note

The cake turned out to be small, but very satisfying! Instead of curds, you can use high-quality curd mass without raisins and additives. In general, a good cream is obtained from any proportions of curd mass (curds), non-acidic sour cream and butter. You can add freshly grated lemon zest to this cream.
