Ingredients

Cooking method

  • It is more convenient to cut everything in advance in the size of 1 bite, i.e. squid and celery-pelderias.
  • I made batter according to Lazerson - the simplest Chinese on starch - everything was approximately "by eye". And let it not bother anyone, it does not matter at all, it will turn out a little thicker / thinner, it will still come out great! (link to the video in the note ladies).
  • We put the oil for deep fat to warm. It is convenient to use a narrow pan, such as a 2L ladle / pot, to use less oil. I explain: take a dish that is wide in diameter, you will have to lime 1.5-2 liters of oil, because you need to pour a sufficient layer for the pieces to float freely - 4-5 cm deep. There is no rationality in a large bowl, because you still can't throw a lot of frying. You can't throw it in at once, because it will stick together into 1 cake (an option for those who thought of it), and you simply won't have time to throw a lot one piece at a time, after all, time goes by, and the first ones are almost ready, the last ones are still raw, but you need to get all batch right away.
  • In general, take care of oil and nerves!
  • So, while deep fat is heating, we make batter:
  • Pour water into the protein approximately 1: 1, gently whisking until light foam on the surface.
  • Squid with celery
  • Pour in starch, for a start, 3 spoons, stir, evaluate the density. It should turn out like thick kefir / fermented baked milk. That is, it is thick, but still pouring. I added more. Everything is individual here, since proteins of different sizes are found, someone splashed a little more / less water, and the proportions are conditional ...

  • While I was trying to catch the stream on the camera, my batter whipped slightly and became lush, this does not need to be achieved on purpose, moreover, it will interfere with evaluating the density.

  • We throw all the squids into the batter, mix.

  • Fry in small batches, not for long, until golden brown (not brown!). We estimate the degree of readiness by the first batch. Whoever is deep-fried on "you", throw only 3-4 pieces to fill your hand and not spoil the product. If the squid has become rubbery-difficult to chew, it is necessary to reduce the frying time by at least (!) By 1 minute. Squid is usually cooked quickly - 3 minutes - and deep-fried it can be faster, depending on the thickness of the particular squid. It seems to me that it took me a minute and a half or two for a game.
  • After frying, pour on paper towels folded in several layers so that excess oil is absorbed. Oh, and I've worn out the towels!
  • Squid with celery
  • As everything has been fried, we "turn" into another dish - a frying pan (any roomy) or a wok.
  • On a minimum amount of oil and high heat, heat (I emphasize: just heat it up!) Celery, abundantly sprinkled with cumin / cumin.

  • Let the amount of this spice not scare even her unlovers. You just can't imagine how much its taste changes in the dish, combining with the rest of the ingredients! This dish in general seems absolutely perverse when you try to present squid and celery together, but cumin / cumin unites everything! The taste is very harmonious! If I hadn’t tried it myself once, I would have looked at someone who would have offered me something like that ...
  • In short, we pour more and are not afraid! The main thing here is that the hand does not flinch at half the dose, otherwise there will be no effect.

  • Add squid to the heated celery, salt (like me) or season with soy sauce, add chili or Tabasco for a pleasant and not at all unnecessary spiciness.

  • Knead everything quickly (remember that it is difficult to chew overcooked squid and only fill it in a slingshot) and immediately serve in portioned bowls.
