Ingredients

Dough:
wheat flour 300 g
sugar 100 g
cold butter 100 g
yolks (whole egg) * 3 (2)
baking powder (baking powder) 1.25 tsp
salt pinch
Cream:
sour cream 20-26% 270-300 g
cottage cheese (regular granular) 170-200 g
sugar 100 g
yolks (whole egg) * 2 (1)
corn starch (potato) 1.5 tbsp. l.
optional flavor enhancers: vanillin, salt by a pinch
Berry layer:
any sour berries, fresh or frozen ~ 1 glass

Cooking method

  • The recipe (source: somewhere deep inside me) is very simple to execute - a kind of five-minute. I did everything in one blender, first the dough, then the cream, the bowl, of course, and did not think to wash.
  • I took a streusel as a basis, but since I always feel sugary and sometimes fat, I changed the classic proportions of flour-sugar-butter 2x2x1 to 3x1x1, - gee-gee-gee, dietary streusel. Who is watching the figure? Come on fly, have a full blast! ))
  • In general, we make crumbs from all the ingredients of the dough in a blender (bowl with knives) on a pulse mode. You can rub it with your hands or chop it with knives. You don't need to cool anything in the refrigerator, it will do.
  • Unload ~ 2/3 of the streusel crumbs into the mold, crush it a little with your hands.

  • I have a detachable steel form, never non-stick, nevertheless, I decided not to lubricate it. In the finished form, everything went off normally, I just pried it with a table knife. Non-stick will generally bounce off. The size of the mold is not critical. In the wide one there will be a low pie, in a small one it will turn out higher.

  • not necessarily thick, and any with sourness, both fresh and frozen (I took out raspberries from the freezer while preparing the dough and cream, they warmed up slightly, but not yet thawed).
  • Fill with cream (just mix the ingredients of the cream in a blender until smooth).

  • We put in an oven preheated to 190 "C (175" with convection) for about 1 hour.

  • Cool in the form to a warm or cold state (there is someone who can handle it) and you can cut it.
  • The bottom layer is sandy, the cream is similar to all creamy / sour cream and other fillings (such as clafutti), and the top is crumbly crunchy streusel. In general, the taste turned out to be mildly creamy and moderately sweet with berry sourness and contrasting textures.

* I did everything on yolks, because I wanted to treat my "hooligan molecules", but they hadn't even tried the proteins yet. And this was the first pie in their life! ))
