Ingredients

For the test:
Flour (I have a general purpose) 450 g
Warm water) 250 g
Vodka 10 g
Salt 1 tsp
Sugar 1 tsp
Vegetable oil 15 g
For minced meat:
Beef + lamb (roughly equal) 770 g
Bulb onion (large) 1 PC
Yogurt 250 g
Salt two pinches
White pepper two pinches
Zira ground two pinches
Vegetable oil for frying 1 l

Cooking method

  • For the test, dissolve salt and sugar in warm water. Combine all ingredients and knead smooth dough (5 minutes in Thermomix). Grease the dough on all sides with vegetable oil, put in a bag and leave on the table for 1 hour.
  • During this time, cook the minced meat. This time I took beef and lamb.

  • I cut bones from lamb, thick veins from beef. Everything will go to broth.

  • Peel and chop the onion. Pass through a meat grinder with a fine grid. I did in Meat grinder CASO FW 2000

  • Add spices, yogurt to the minced meat and knead vigorously with a spoon.

  • Leave the minced meat in the refrigerator until the dough is ready.
  • Pinch off pieces from the finished dough (the rest of the dough should be in a bag so as not to get aired), roll out, 3mm thick. I rolled it out on a dough roller twice at a thickness of 0-2-4 (thickness marking from 0 to 9). Use flour for dusting if necessary.
  • Next, cut out circles of the required diameter from the dough. I had two sizes 10cm and 12cm. I used one or the other, depending on the width of the rolled dough.
  • Put the filling on one half. I put a dessert spoon for a small circle and a heaped dessert spoon for a large one. Cover the filling with the second half of the dough and pinch. I finally used a special wheel that had been untested for two years.))))))
  • In a frying pan (I have a stainless steel) heat 0.5 liters of oil and fry the pasties over medium heat on both sides. At first, my fire was strong and the pasties burned. When the first half was fried, I poured out the oil, washed the pan and poured in new oil. I cooked chebureks in batches - while one (4 pieces) is fried, I rolled out and collected the second batch. It seemed to me that the meat will lie on the dough for a long time. then the dough will get wet. Moreover, raw pasties are very soft and tender.
  • Put the finished pasties on a towel to drain excess fat.

Googled, it is still there and functioning.))). So, I went over the recipes, chose the version of the dough with vodka, which, when interacting with sugar, gives the crunchiness of the dough. It turned out juicy and indecently tasty. The first half did not even have the opportunity to photograph, because I ate with my husband, burning in a race.)))) I don’t know if I’ll be capable of such a feat again, but my husband hopes so. He like it very much.
