Ingredients

Flour 2.5 tbsp.
Butter 180 g
Sour cream 20% 2 tbsp. l. slightly riding
Granulated sugar (brown) 160-170 g (3/4 st.)
Large chicken egg 1 PC.
Salt 1/3 tsp
Baking powder 1 tsp
Cinnamon, lemon or orange peel taste
Grated almond (2 tbsp. L. Replace 2 tbsp. L. Flour)
Vanilla sugar 1 tsp
Measuring cup 250 ml

Cooking method

  • My earliest childhood memories are connected with these "Worms". Our family always cooked a lot and varied, people constantly visited the house, my brother's friends, my girlfriends came, and closer to the weekend my grandmother started baking such cookies from the leftover butter and sour cream, so that you could always serve homemade cookies for tea.
  • There was no exact recipe, so the taste of the cookies varied slightly - it turned out to be more crumbly, then crunchy, sweet and not so! Supplements also varied depending on the availability of foods, from cinnamon to nuts. My mother still often bakes these "Worms", although her age no longer allows her to make cakes with 18 layers and all sorts of complex dishes.
  • I have made several attempts to find my "today's" taste of this cookie, the shape and method of preparation of which is familiar to many. So I decided to put my own version.
  • There is a small nuance in this recipe. We love having lightly undissolved sugar in the finished cookies. It crunches so pleasantly unobtrusively when eaten! To do this, sugar is introduced into a ready-made mixture of flour and butter, and the dough is practically not kneaded.
  • Try it, suddenly this recipe will suit you.
  • Preparation
  • - Mix flour with vanilla powder and chop with ice butter, diced into small pieces, by hand or in a food processor. (If you want to add grated nuts, replace some of the flour with them. I add 1-2 tablespoons for flavor.)

  • - Mix the egg with sour cream and salt.
  • - Add baking powder, zest to the flour and butter mixture, then mix quickly and thoroughly. (I think baking powder can be mixed with flour right away.)
  • - Add granulated sugar to the dry mixture and mix well.

  • - Pour sour cream mixed with an egg into the dry mixture and quickly form a not very uniform lump of dough. No need to knead until smooth, just collect in a lump, slightly mixing.

  • - Put the dough in a plastic bag, arrange it inside the bag in the form of a ball or thick cake and put it in the refrigerator for half an hour.

Note

Part of the flour, literally 2 tbsp. l., can be replaced with grated almonds or spelled flour. While I was typing, I came up with the idea to replace part of the flour with one spoonful of cornstarch, but I don't know yet if the dough will gather in a ball. I'll try.

Baby cookies with oatmeal
3/4 cup sugar, 1/3 tsp baking soda, 1 egg to white, then add 2 tablespoons of milk or sour cream, 1 tablespoon of honey and 100 g of soft butter, chopped zest (it is not written which, apparently, lemon), 2 , 5 tbsp flour and 0.5 tbsp oatmeal.
Knead a rather steep dough and mince. Bake in a hot oven.
And we did not do it with astrochki, but divided the scrolled dough in half lengthwise, about 6-7 cm. Such long sausages turned out.
And the oatmeal gave an interesting taste.
