  • This cake has been cooked in our family for many, many years. Mom learned how to bake it from her mother-in-law, and I already from my mother. The preparation of the pie is very simple: the dough is kneaded with a spoon directly in a bowl, put on proofer and baked.
  • It tastes like a lush baking. Try it yourself.

  • I start the preparation of this cake by preparing the mold and raisins.
  • I wash the raisins well, soak them in warm water.
  • I use a rectangular shape with high sides. Its size is 27 cm by 35 cm
  • I grease the bottom and sides with butter or margarine. I put it aside.

  • I use a large bowl to knead the dough. I break eggs into it (I set aside part of one yolk for lubrication), Beat lightly with a hand whisk. I add granulated sugar and vanilla sugar. I dilute the yeast with a small amount of milk, pour it into a bowl.

  • I add vegetable oil there, add sifted flour.
  • (The exact amount of flour was not indicated in the base recipe, it was only written that the dough should not be thick. With as many ingredients as I suggest in the composition, it takes me 5 faceted glasses of flour.)
  • I knead the dough with a regular spoon. Long kneading is not required at all. Stir until no lumps of flour remain. It turns out the dough is not liquid, but not thick either.

  • I pour in the raisins, having previously rolled it in 1 tbsp. l. flour. I knead it into the dough.
  • The original recipe still contains sour cream - also 1 glass. I don't always use it. If you want to add sour cream, do not forget to increase the amount of flour.
  • I put the dough in a prepared form. (As you can see in the photo, it doesn't bleed.) I fill in the entire volume, level it out.

  • I put in a warm (30 degrees) oven to rise. With good yeast, the dough rises quickly. Earlier, I remember, it took about 3 hours, now 1 hour 20 minutes is enough - 1 hour. 30 minutes. Focus on your pie. As soon as it doubles, it's time to take it out of the oven.

  • Be careful not to shake the baking sheet when you take it out - the dough may settle because it is so tender.

  • I take out the distant dough.
  • I turn on the oven to heat up to 180 degrees.
  • Part of the yolk left during kneading is slightly diluted with water. I grease the top of the future pie with the resulting composition. I do this very carefully, trying not to crush the dough. I cover it with an inverted baking sheet from airing.
  • After about 15 minutes, put the mold in a preheated oven.
  • The dough will begin to grow right before your eyes. Therefore, try to leave him a couple of cm to rise when proofing, do not let him rise above the sides. This will also prevent the cake from sinking in the middle, which happens when the dough is overcooked.
  • I bake a pie for 35-40 minutes. In the middle of baking, I lower the oven temperature slightly to 170-160 degrees.
  • I check the readiness of the cake with a toothpick or wooden skewer.
  • I take out the finished ruddy cake from the oven, cover it with a towel, and cool it. Then I carefully separate the edges from the sides with a silicone knife, cut them right into the mold.

I usually count like this when baking bread: 1 tsp. dry = 5.5-6 g pressed. This means that the pie needs about 6 tsp. dry. In Easter cakes, when we translated according to this scheme, everything worked out perfectly. If you have proven yeast, then add less - 5 spoons, and increase the proofing.
