Cake A la Tiramisu

Ingredients

Biscuit
Chicken eggs 6 pcs
Granulated sugar 220-230 g
Flour 150 g
Vanilla sugar 10 g
Baking powder 10 g
Cream
Mascarpone 500 g
Milk cream 30% 350 ml
Powdered sugar 80 g
Ganache
Cream 30% 100 ml
Dark chocolate 180 g
Butter 10-20 g

Cooking method

  • 1. Beat eggs with sugar until white, add vanilla sugar and sifted flour, well mixed with baking powder. Beat for another 5-7 minutes. There should be a lot of bubbles on the surface.
  • 2. Pour the dough into a mold (put a circle of parchment on the bottom of the mold to make it easier to pull out the finished biscuit).
  • 3. Bake the sponge cake at 170-180 degrees for about 25 minutes (focus on your oven). Willingness to check with a wooden skewer. Remove the finished biscuit from the mold and cool on a wire rack. My form was small (about 20 cm in diameter), I divided the dough in half and got 2 biscuits. Cut each of the biscuits in half.
  • 4. For the cream, beat the cream.
  • 5. Cream cheese (I took mascarpone, but another is also suitable) grind well with powdered sugar (you can do this with a spoon).
  • 6. Add the whipped cream to the curd and stir gently until smooth. I always do it by hand with a spoon and the cream is very delicate and airy.
  • 7. Make coffee strong enough and add some liquor. Sometimes I don't add liquor, it also turns out delicious!
  • 8. Soak each cake layer with coffee and put a layer of cream on top (the layer should not be thin!)
  • 9. Assemble the cake: it is easier to assemble the cake in the frame, it will be more even.
  • 10. It is better to put the cake in the refrigerator for several hours, soak it. Better at night - it will be tastier! Then remove the frame and decorate the cake. Top can be covered with butter cream and sprinkled with cocoa or garnished with grated chocolate. I covered the sides of the cake with chocolate ganache and the top with butter cream.
  • 11. To prepare ganache, break the chocolate into pieces, heat the cream to a boil, but do not boil and pour the cream over the chocolate. Stir well with a spoon or whisk until the chocolate is completely dissolved. Add a piece of butter and stir again. Leave the ganache to cool and put it in the refrigerator for a while until it becomes thicker.
  • 12. Then take out the chocolate and beat with a mixer until a mousse-like mass is obtained. If the resulting mass is well cooled, then delicious homemade chocolates can be made from it.
  • 13. Cover the sides of the cake with chocolate ganache and decorate with butter cream on top using a pastry syringe.
  • I used a stencil for drawing on the sides.
