  • This is how the author describes his work. I have baked this cake 2 times already and am very happy with the result. The main thing is to observe technology and proportions and get an amazingly tasty cake. So:
  • Sift dry ingredients into a large bowl: flour (375 g), cocoa (90 g), baking powder (10 g), soda (7 g). Please use the best possible cocoa. No green packs. We need taste, color, and the absence of particles crunching on our teeth.
  • Mix everything thoroughly with a whisk.
  • And in the mixer bowl, combine any vegetable oil (150 g) and sugar (450 g).
  • Beat well with a mixer. It is clear that such butter will not foam up like butter, so we just wait for the homogeneity of the mass.
  • Then we lower the speed to low and add all the eggs (3 pcs) and vanilla extract (5 g). Beat the mass for 2 minutes.
  • We introduce half of the dry mixture. Whisk.
  • Pour in milk (150 g), the temperature is not important here.
  • And now the fun part is hot coffee (340 g). You can take instant coffee, brew it yourself or use a coffee machine. The main thing is boiling water. By the way, if you, for some reason, are afraid of coffee - just add water. What happens at this moment? Boiling water activates the baking powder, and although we are used to seeing it work already in the oven, in this case we need air in the dough right away. Then you will see the difference. Second point, cocoa is brewed. It literally turns into hot chocolate (we have cocoa, fat and temperature to heat it), so the cakes will be surprisingly darker. Alcohol (75 g) must also be sent there. you can whiskey, cognac, liqueurs, in short everything that has a pleasant tart aroma (not wine, of course). Again, special housewives can substitute water or juice for this.
  • Beat on low speed and add the rest of the dry ingredients.
  • It turns out a lot of dough. Now is the time to decide how we will bake, in 2 or 3 passes. The dough will be runny, it may confuse you. Do not be alarmed if everything was done with scales - it means you have the correct dough, and even though it seems that it runs straight, this is normal.
  • We bake at 180 degrees, preheated the oven, top and bottom.
  • We bake a single cake for about 25 minutes, if there are more portions in the form, the time will increase. There is a subtle point here - the dough is very dark, and during the baking process it will turn completely black, so you may not catch the moment when the cake is burnt. Check with a skewer, as soon as it comes out dry - take it out. You can just press the center of the cake with your finger, as the pros do, if the cake is springy, it is clear that it is completely baked. You can safely bake the rest of the cakes for exactly the same amount of time. And don't be afraid for the dough, it will wait.
  • I baked twice in a slow cooker. And the second cake in half: one part of the dough in the slow cooker, the second in the oven. In a multicooker, a full cycle of 50 minutes. + an hour was off. Faster in the oven, 30 min. and you're done.

  • Any cream you love. I did it with Plombir and with cheese and cream. We decorate as desired.

In American recipes, everything is indicated in spoons and cups, so I wanted to bake it again, weigh everything in grams and publish this biscuit with us. Late))))))))))))))))
In any case, the recipe is superb and I recommend it to everyone.
ps I baked on alkalized cocoa Barry Calabout, the taste turned out to be too intense for me and with a bitter cocoa aftertaste, but not a fan of chocolate products. The cream was oil / var. condensed milk, very tasty. But absolutely everyone at home demanded this cake for permanent.

Made this cake today. We really enjoyed! Baking 4 cakes in a split form. Cream - custard for 3 minutes in the microwave, frozen strawberries. Replaced alcohol with coffee. I just rubbed the chocolate on top. It bakes very easily, the taste is pleasant. True, the sugar cut - 300 grams instead of 450. Quite enough.

My cakes did not work out ((, I did everything strictly according to the recipe, instead of alcohol, I added water. The cakes did not rise well, almost flat.
I added another 1 packet of baking powder, it looks much better, I hope it won't affect the taste much.
