Chicken Terrine

Ingredients

Minced chicken or finely minced meat 300 g
Ground beef or pork 300 g
Chicken liver 300 g
Boiled eggs 2 pcs
Raw eggs 1 PC
Bulb onions 1 PC
Semolina 3 tbsp. l.
butter 1 tbsp. l.
Chicken skin

Cooking method

  • Chicken Terrine Take chicken, minced meat and finely chopped liver.
  • Chicken Terrine Add eggs, boiled finely chopped or grated, onions, too, as you like, I grind in a blender into gruel, semolina and soft butter. Salt, pepper and other seasonings to taste. Knead very well.
  • Chicken Terrine We take a part of the skin and line them with forms. Mom always cooked in one of the bread tins. I don't have such a shape, so I just took the smallest one.
  • Chicken TerrineWe spread our minced meat on the skin and cover it with leather on top. We put it in the oven at 190 degrees, in my oven this terrine is baked for about 1.20 hours.
  • Chicken Terrine When the terrine is baked in a mold, put it in the cold, about overnight. In the morning, we remove the skin, we no longer need it.
  • Chicken TerrineWe cut the terrine into the desired pieces, it is cut very well.

In high school, it was 92-95 years old, my parents received almost no salary, and we began to keep broiler chickens in the country. Over the summer, these chickens swung into such horses, which were released to the dacha to peck the remnants of the harvest. Of course, it was great not to clean the dacha in the fall, the chickens pecked everything clean, but in the spring it was impossible to dig the dacha, they trampled the ground with their paws so that my sister and I dug and dug these unfortunate 6 acres. Of course, all the dishes we had only with chicken, my sister even had a saying "I will definitely be crowing soon." But then we were with meat for all holidays and birthdays. At school at that time we were not fed and we had to take food with us. Mom made different chicken rolls, but this terrine casserole was my favorite. Now, of course, I add minced beef or pork, and then instead of it, my mother added ground chicken stomachs. It was delicious. Now I cook this terrine as a snack instead of sausage. Flies away quickly.
