Cupcake Continuous Benefits: Curd, Honey, Whole Grain

Ingredients

Whole grain wheat flour 200 g
Cottage cheese 210 g (1 pack)
Eggs category C0 2 pcs.
Honey 100 g (I have 50 g)
Butter 50 g
Drinking water 50 g
Soda 1/2 tsp
Potato starch 30 g
Salt Pinch

Cooking method

  • Cupcake Continuous Benefits: Curd, Honey, Whole Grain
  • Since the refrigerator is full of cottage cheese, cottage cheese muffins or pie were clearly asking for the next baked goods. I decided to make them useful by replacing sugar with honey and ordinary wheat flour with whole grain. It turned out very tasty!
  • Immediately, I draw your attention to the fact that it is better for those with a sweet tooth to increase the amount of honey at least 2 times or add sugar. I prefer low-sweet pastries, but this time I decided to only indicate light sweetness at all and put only 50 g of honey
  • We turn on the oven 180 degrees and take the dough.

  • We put butter (can be replaced with vegetable oil) in the dishes where the dough will be prepared, add honey, salt and water, heat until the butter and honey melt, then stir in the soda and observe the active process of foam formation.
  • Quickly add the crumbled cottage cheese (I have a fairly dry 9%), then stir in the flour and starch sifted together.
  • The dough is ready: thick, not dripping from the spoon, but soft.

  • add the eggs after the cottage cheese to the already cooled mixture of honey and butter so that the eggs do not curl
  • We lay out the dough into shapes.

  • During the baking process, the muffins grew quite well. We check the readiness of the "dry torch".

  • The structure of the finished muffins is porous, elastic, but at the same time without "rubberiness" and stickiness.
  • Conclusion: delicious! And in the house there is an incomparable aroma of freshly baked bread with a hint of honey ...

The dish is designed for

12 pcs.

Time for preparing:

Note

Probably, this cupcake is also suitable for a multicooker, but I did not want to make a small portion, and a large portion will not fit in my multicooker
Next time I want to add raisins and cranberries (today they were not at home), I think there will be an excellent contrast of tastes
Also, lovers of citrus fruits in baking may like the option of replacing water with orange juice, you can add a little zest to the dough

Mandarinka @, Marina, what beautiful cupcakes you have! Both the taste and the aroma should be delicious! A perfect combination of cottage cheese with honey! Also usefulness attracts. I think you are right about the multicooker, most likely, I will bake in it. And the advice about orange juice comes in handy.

Just today I met a good juice recipe.

I'm taking it to bookmarks. Thank you for the wonderful recipe for healthy, aromatic and delicious honey and curd muffins!

Loya
Thanks for the interesting recipe! Tell me, can you replace whole grain flour with any other (oatmeal, corn ...)? Somehow I'm not friends with whole grain, but I collect fitness recipes
NatalyTeo
Eggs do not appear in the recipe description
Mandarinka @
Loya, you are welcome! Try it, probably you can, I have not tried it yet. Share later how it goes. Oatmeal and buckwheat flour rather poorly rise, I would not completely replace them. Maybe then add some of the usual wheat flour ...
NatalyTeo, You are right, we add the eggs after the cottage cheese to the already cooled mixture of honey and butter so that the eggs do not curl.
Added.
