Chicken thigh and thyme potatoes (sous vide)

Ingredients

skinless chicken thigh 5 pieces
Adyghe salt taste
pink salt pinch
pepper mix taste
juniper berries 5 pieces
thyme 2 twigs
butter 2 pieces
potatoes 500-600 g
Adyghe salt 1 tsp
pepper mix taste
garlic 1 slice
thyme 2 twigs
butter 2 pieces
grated cheese taste

Cooking method

  • Season the chicken thigh with salt and pepper. Crush the juniper berries in a mortar.
  • Place the chicken thighs in a vacuum bag, on top a couple of pieces of butter, crushed berries and thyme sprigs. Evacuate air and solder.
  • Chicken thigh and thyme potatoes (sous vide)
  • Put the bag in preheated water to 63 degrees (I have Steba SV1) and cook for 1 hour.
  • Before serving, fry for a minute on each side on a grill or skillet.
  • Chop the potatoes and soak in cold water for 30 minutes. Then drain the water, dry the potatoes, mix with salt, pepper and garlic.
  • Place in a vacuum bag, top with butter and thyme. Evacuate air and solder.

  • Put the bag in pre-heated water to 85 degrees and cook for 1 hour 30 minutes (I still lay in the cooling water for about 30 minutes)
  • Put ready-made potatoes and meat on a plate, sprinkle with grated cheese.
