Exotic salad in pineapple halves

Ingredients

a pineapple 1 PC
boiled king prawns 300 g
pickled or boiled mushrooms 100 g
cucumber 1 PC
cognac 10-20 ml
wine vinegar 1 tbsp. l.
olive oil 2 tbsp. l.
brown sugar or honey 1 tbsp. l.
hot red pepper taste

Cooking method

  • Wash the pineapple and cut in half with the leaves. Take out the pulp and cut it into small cubes.
  • Defrost and peel the shrimps, sprinkle them with cognac and sprinkle with a pinch of hot pepper, leave to marinate.
  • Wash the champignons, cut into quarters and boil or marinate in a 1: 1 solution of water and white wine vinegar, adding crushed garlic and spices.
  • Cut the cucumber into small pieces or cubes.
  • For dressing, combine wine vinegar, olive oil, brown sugar or honey.
  • Combine prepared vegetables in a bowl, pour over the dressing and stir. Then fill the pineapple halves with this mixture.

It was once an unplanned salad that I prepared for the New Year. Already on January 31, making the last preparations, I saw on TV how one of the famous chefs was preparing such a salad. Well, maybe not quite like that, I didn't write anything down, but I prepared it from memory and from what was. Nevertheless, the salad turned out to be excellent, now I prepare it for every New Year along with the traditional Olivier. The family is just delighted with him!
