Without the inherent "goat" attributes in the form of a specific aroma and aftertaste, with a bright creamy-filling taste. And as for the characteristics, such as fat content, protein content, density ... in general - very good and unusual milk.

  • The first step is to heat the milk. The ideal temperature is 32 to 35 degrees. Above is not necessary.

  • And then we drive the milk through the separator. It is necessary to regulate so that the ratio of cream and skim milk is one to ten at the output. You can do more, but experience will be enough.

  • And then the cream needs to ripen. We have them for 24 hours warm, at room temperature, but on the windowsill. Then two - three days in the refrigerator. The cream thickens. They practically turn into sour cream.

  • And then into the churn. Be sure to prepare ice.
  • Our churn is large, it must be loaded at least half.

  • When the cream starts to rise, turn into such an airy mass of whipped cream, add ice to the churn.
  • We had little cream. Therefore, when the cream has condensed to the state of "soft butter", the churn knives stopped churning the butter, as they say. Transferred to a mixer - dough mixer. And finished off at high speed.

  • And this is buttermilk. Quite a bit worked out.

  • Oil. Now I will rinse. The water must be very cold. Therefore, the ice is used again.

  • When washing, the oil must be kneaded. As with washing, practically. At Vereshchagin's factory, this happened on the washing boards. In a constant stream of cold water. Well, I just knead, in this very water with ice. Squeezing buttermilk from the mass.

  • Here's a change of pictures. First ... etc. water. That is, the water must be constantly changed. In this case, I changed it four times. The fourth water is already almost transparent, even after several minutes of crushing the oil into it. So there is no buttermilk left in the oil.
