Lean homemade pasta

Ingredients

Wheat flour 100 g
Hard grades semolina (I have Macfa) 100 g
Vegetable oil 35 g
Ice water 105 g

Cooking method

  • Mix flour with semolina.
  • Add vegetable mixture, stir.
  • Pour in water and quickly knead the dough. Collect the dough in a ball, wrap in plastic and send to the refrigerator for 30 - 60 minutes.
  • Next, pinch off small pieces from the dough, roll them into a layer and cut the noodles to the desired thickness. I do it on a dough sheeter. Roll out (scale from 0 to 9) 0 (2 times) -2 (2 times) -4 92 times) -5 (1 time).
  • Dry the finished paste in a dryer. I leave it overnight.
  • Boil such a paste literally 2-3 minutes after boiling.
  • It is better to rinse the finished paste or immediately mix it with vegetable oil so that it does not stick together.
