Whole Wheat Bread

Ingredients

Wheat flour c / z 240gr.
Wheat flour 1 grade (type 812) 360gr.
water 450gr.
fresh yeast 7gr.
salt 11gr.

Cooking method

  • This bread is purely my imagination, I do not pretend to be originality, but perhaps someone will want to try this recipe.
  • So; mix both types of flour, then separate a couple of tbsp. spoons from the bulk and rub the tremors in it, fill the main part with water and leave for 1 hour. Next, add flour with crushed yeast and salt into the flour filled with water, mix and dump it on the table, and stretch and fold (I got 700 folds). Next, we send the dough to the refrigerator for 16 hours. In the morning we take out the dough and divide it into two parts, roll it into balls and leave for 30 minutes, then shaping and proofing for one hour. Baking 35 min. at 230C with steam.

What does it mean "steam baked goods"?
I'm just a beginner baker (very, very beginner) and don't know many "professional" expressions. Is it in the oven down a baking sheet of water?

It turns out very good bread under the hood. his pair is enough for him.
To get the "correct" steam, you need to heat an empty frying pan together with the oven and pour a cup of boiling water or ice into it. You can also get burned. You just need to have baking gloves up to your elbows. Then nothing is scary.

Linen, putting a bowl of water, you just create moisture, it seems to me. And when you pour, then a club of steam breaks out like a shock wave. Maybe I'm wrong. Look for more info on the Internet and read it. But try to do as I wrote to you, and you will see the difference.

Yeah, I'll try with a hot frying pan. Now I have bread molds, I bake in them, the lid is difficult to find.
I just did it with the lid more than once, until the molds were there and the hearth was trying to bake and I didn't understand the difference
