  • I found 2 versions of "Monkey" bread on any of our sites and immediately remembered that I have been baking something similar for many years, but it is more like a cupcake or a very rich bun. On the eve of the year of the Monkey decided to offer this recipe to dear forum users and forum users! In our family he is loved, who knows, maybe you will love him as much as we do.
  • You can bake it with all sorts of additives, who loves what or what was found in our reserves. Here everything will go into action and every time it will be a completely NEW cupcake, unlike the previous ones. First of all, I was interested in the unusual "patchwork" technique of performance.
  • So let's get started.
  • 1. First you need to prepare the filling for our cake. To do this, I take everything that was found in my lockers and refrigerator. In this cupcake, I used raisins, candied fruits, dried cherries, and dried cranberries. I cut everything a little so that it is not very large, put it in a bowl, fill it with cognac or rum (which was found in the house) and leave it to brew at least overnight. But usually I always have such a bowl ready in the refrigerator (with good aging).
  • 2. Melt butter in a small bowl.
  • 3. Roll out the dough into a layer 5-7 mm thick. Cut it into small pieces in any shape.
  • 4. Then we begin to dip each shred into melted butter and spread the bottom of the mold with them in random order, but so that each shred goes a little over the previous one. But that it was not like a ruler, but chaotic.
  • 5. When the bottom is completely filled with rags. we pour in part of the fruits, candied fruits, nuts or chocolate we have prepared earlier (with which you decided to make a cupcake).
  • 6. Then we repeat steps 3,4,5 in turn. And so on until we fill out the form in half or 2/3.
  • 7. Cover the prepared cake with a napkin or plastic wrap and leave for proofing for 20-30 minutes (but this again depends on the rise of the dough).
  • 8. Grease the top of the cake with a stirred egg and sprinkle with sesame seeds (as in my case), poppy seeds or nuts.
  • 9. Bake at 200-220 C until tender (I can't tell you the time, since everyone has different ovens).

Yeast dough (Luman)

Light, tender dough ...
Perfect for any oven baked goods: rolls, crunches, pies, bagels, buns, buns, etc. Baking from it feels weightless ...
Dough:
70 g yeast (pressed)
1 tbsp. warm water
1 tbsp. l. Sahara
For the test:
0.5 l milk
175 g sl. butter (or margarine)
1-2 tbsp. sugar (to taste)
3 eggs
1 tsp salt
2 bags (10 g each) vanilla sugar
~ 10 st. flour
Besides:
3-4 tbsp. l. vegetable oil

• glass - volume 250 ml
... Sift flour.
Pour half into a wide bowl.
Make a funnel in the middle.
Crumble the yeast into the formed cavity. Add sugar. Mix.
Pour in warm water. Stir. Sprinkle a little flour on top.
Cover and leave in a warm place (no drafts) until the dough fits like a "hat" and begins to "crack" falling off.
2. Pour half of the milk into a saucepan. Add margarine, cut into pieces.
While stirring, slightly warm up until the margarine melts - never bring it to a boil!
Remove the saucepan from the heat.
Add sugar, vanilla sugar and salt. Stir until sugar dissolves - the liquid should be at the temperature of fresh milk.
Separately beat the eggs and beat lightly with the rest of the milk. Add to prepared milk mixture. Stir with a whisk until smooth.
Pour into a bowl of ready-made dough. Mix everything.
3. Adding flour, knead a soft, elastic dough that does not stick to your palms.

Important:
When kneading the dough, add a little flour. It is better to add flour using a special sieve-mug - thanks to this, the flour is again enriched with oxygen, distributed more evenly in the kneaded mass.
When kneading the yeast dough, grease the palms and the surface of the table with vegetable oil.

Beat the kneaded dough on the table: lift it up and forcefully throw it on the tabletop (repeat 30-50 times). After that, the dough becomes softer and denser and seems to be lighter. Form a ball.
4. Grease a spacious bowl with vegetable oil. Put a ball of dough in it - with the bottom part it will be oiled. Turn over and place with unlubricated side down.
Cover. (For example, I cover the top with a sieve or microwave lid and a large towel).
Place in a warm place protected from drafts.
Allow the dough to rise until it approximately triples in volume.
Then knead the dough and start forming the products.

Since during the time when the first baking is being prepared, the rest of the dough "fits" again, it must be kneaded again.
