Vegetarian lean marshmallow with applesauce

Ingredients

chickpea decoction 65 grams
apple puree 65 grams
sugar 125 gram
Syrup
agar 5 grams
water 90 grams
sugar 170 gram
Additionally
vanilla taste
powdered sugar option

Cooking method

  • Soak the chickpeas overnight. Drain the water, pour in a new one, boil and cool completely in liquid.
  • Strain the broth and begin to beat.
  • I can't beat quickly. Beat for 20 minutes.
  • When the mass thickens, gradually add half the sugar, vanilla.
  • Peel, cut and place the apples in the microwave at full power for 5-7 minutes.
  • Purée.
  • Allow to cool.
  • Add sugar and beat.
  • The mass will turn white.
  • Add applesauce in a spoonful to the whipped mass of chickpea broth, whisking constantly.
  • We leave to beat, and we cook the syrup ourselves.
  • Soak the agar in advance, about 30 minutes.
  • Put on fire, bring to a boil with constant stirring.
  • Add sugar, stir and cook until strands are formed. About 10 minutes. Stir constantly.
  • Pour into the mass in a thin stream hot with constant beating.
  • The mass becomes liquid.
  • Beat for another 2-3 minutes. Turn off the mixer and let it cool slightly so that the mass begins to thicken.
  • At this time, we prepare a pastry bag with a nozzle and a stele of baking paper or a silicone mat.
  • Sediment the slightly thickened mass.
  • Leave to harden for a few hours.
  • Sprinkle with powdered sugar. If you want, then glue in pairs.

Marina, marshmallow is sweet, as befits a marshmallow. You can reduce sugar, but then you need to eat it that day. Anna above answered. She did it with a substitute. Take it out of the refrigerator an hour before whipping and let it warm up. Although Oksana Loksa, whipped hot, as far as I remember. And everything worked out for her.

Next time I will try a more budgetary option with gelatin, since the problems of vegetarianism do not bother me, but it dissolves better with me and without problems with escape. While I am dissatisfied with the taste, the dosage must be clarified.

I didn't put sugar at all, as I was preparing an allergic person for the child. I added 250 gr to the syrup. sugar, 20 gr. agar and 380 gr. water. I didn't put it in a bag - I wouldn't have had time to plant such a huge amount. Therefore, I simply laid it out on a greased baking sheet with a layer of 3-3.5 cm. I transferred it to a cool room. In the morning, she cut and packed in trays on oiled cellophane. Fine!!!! Even better than I expected! Thank you dear for a great recipe!
Net weight 990 gr. It keeps its shape perfectly. But whipped for a very long time!
