Siberian shanzhki

Ingredients

Flour 550-600gr
Sugar 0.25st
Fresh yeast 20gr
Yolks 2-3
Oil 150gr
Milk 250ml
Salt 0.5h l

Cooking method

  • Someone calls buns of this shape stuffed with cheesecakes, but in my family they were called shanezhkas.
  • The dough of these shanezhek turns out to be very interesting. If you make them with a sweet filling, then sugar can be added up to half a glass.
  • First, I weighed all the ingredients.
  • All yeast, a part of warm milk, a teaspoon of sugar and a part of flour were mixed for dough in a food processor. She put the bowl in a warm oven.
  • After about half an hour, I added milk mixed with sugar and yolks, salt and the rest of the flour. Knead the dough well, at first it will be sticky, but then it will gather into an unstable bun, flour can be added if it turns out to be watery.
  • The dough went back to the warm oven.
  • After about an hour we take out the dough, roll out small balls and slightly crush them into a cake, put them on a sheet. We distribute for a while.
  • Cooking the filling.
  • Today I have shanzhki with potatoes and jam.
  • Siberian shanzhki
  • The filling is ready. We take a glass and knead a hole in the center of each cake with the bottom of the glass. Put the filling in right away.
  • Shanezhki must be greased with either an egg or sour cream.
  • Heat the oven to 180 * and bake until browned.
  • Here's what happened
  • Siberian shanzhki

Note

In my childhood, for all the holidays in our family, they baked yeast buns, and pies with jam and shanezhki. Cakes somehow were not widespread, but shangi, shanezhki were always.
In the evening, mom or grandmothers started a huge portion of the dough, at night they got up to beat it up. How the house smelled !!!! This doughy spirit, the smell of aged and fermented, that's how our holidays always smelled !!!
They always baked a lot, then they put the pastries in enamel buckets and put them out in the cold.
We baked shanezhki with cottage cheese, lingonberries, jam.
Well, the part was with potatoes !!
How delicious it was !!!
