Roast with eggplant

Ingredients

Meat (I have beef with ribs) 1 kg
Vegetable oil 70 ml
Fresh garlic 1 head
Bulb onions 3 medium
Carrot 2 large
Bell pepper red 2 pcs.
Tomato paste 25% 3 tbsp. l. from the hills.
Water about 1.5 l
Zira coarse 1h l. from the hills.
Ground coriander 1h l. b / slides
Salt 2 tsp from the hills.
Paprika 1 tsp
Potatoes (weight with peel) 1.5 - 2 kg
Eggplant (2 large possible) 3 medium
Fresh herbs (dill, parsley) by beam
Black or pepper mix (4 Peppers) bol. pinch

Cooking method

  • I, of course, will not open America, but maybe someone is interested in my interpretation of this wonderful dish ...
  • I cook it in an oriental manner, that is, I use cottonseed oil, cumin and coriander, and also, if the meat is lean, then I add my favorite dumba. This time, I have just wonderful beef cut from the ribs. It is fat and juicy, so I did not use the dumba.
  • I arranged the ingredients in the order they were placed in the cauldron, it seems to me that this is more convenient, and I won't forget anything either.
  • So, we cut the meat into not very large pieces and put them in a cold cauldron, in which oil is already poured.
  • These are the pieces I cut:

  • We turn on the fire, cover the cauldron with a lid and simmer the meat in our own juice almost until tender - 50-60 minutes. Maybe sometimes you have to add a little water if the juice evaporates.
  • (If we cook with pork, then skip the preliminary stewing. Fry immediately.)
  • Then, remove the lid, and already on high heat, evaporate the remaining liquid and lightly fry the meat.
  • As soon as it is browned, throw in half the head of garlic, cut into slices, and generously sprinkle with freshly ground pepper on top:

  • Fry for 1 minute and add: coarsely chopped onions, carrots - in thick circles and one bell pepper, cut into small cubes. We fry the whole thing until the delicious aroma of fried pepper, that is, seven minutes. It will be seen that both the carrot and the onion are already slightly grabbed by the golden grain:

  • Can you imagine how it all smells ?! Fried meat with garlic and freshly ground pepper, carrots with onions and fried bell peppers ... hmmm ... Yes, I stayed at the table all the time, the whole shoby didn't fall on the floor!
  • Now add 3 full, with a slide, tablespoons of good tomato paste, mix everything thoroughly and fry, stirring often, for at least two minutes, so that the pasta also smells delicious fried.
  • What a beauty! And zapaaah ... De my rat ?! Here she always runs around somewhere when she is urgently needed!

  • Now that we have fried the pasta, pour a little less than 1.5 liters of cold water into our cauldron. Why cold, you ask? And I will answer you: firstly, because our cauldron is already red-hot (we fried everything over high heat, have you forgotten?), And if you pour boiling water there, then a very violent boil will immediately begin, which will make our broth cloudy , I would even say, whitish, but I don't like his appearance. What am I, in vain, pasta, tunnels, tormented! And secondly, by pouring cold water and turning down the fire, we let the whole business slowly gain temperature and slowly boil. Thus, our vegetables will not ferment, and in the meantime we will have time to peel the potatoes. We need it as much as we want to have it in the finished dish, that is, 2 kg - for a thick roast, and 1.5 - for a roast in sauce. It's up to you. Personally, I ... thought about it and ... cleaned all two kilograms. Although I like roast with a lot of sauce.
  • So, we add salt, spices to our cauldron and throw in chopped potatoes, whatever you like. I like to cut it in thick circles:

  • Behind him flies into the cauldron, the remaining one Bulgarian pepper, cut into large pieces, as well as the remaining half of the head of garlic, cut into slices.

  • Do you know why I half some ingredients? I just like to combine the same products in one dish, but cooked in different ways. After all, both garlic and peppers, fried and boiled, taste four big differences. And we combine all these "differences" in one dish, significantly improving its taste, which ceases to be ... flat, or something ... Well, you get the idea.
  • Teeek, sir ... what did I say there, hospad? ... You distract a serious person over trifles, "zachey", "pachimuuu" ... and then he doesn't remember what business he went to the Bread Maker on!
  • Oh yes! Now you can close our cauldron and leave to cook for 15-20 minutes, depending on the size of the chopped potatoes. We need to boil it so that it is almost ready. Now we quickly cut the eggplants into very large pieces, 2-2.5 centimeters thick. You don't need to cut them in advance, they will darken very quickly and lose their appearance.
  • We throw our eggplants into the cauldron and sink them with a slotted spoon in the sauce. They will pop up anyway, but you still need to "redeem" them:

  • We close the cauldron and cook for exactly 5 minutes. Turn off the fire. And we leave our roast to rest for ten minutes. Then we throw in the greens, mix and you can eat. Hospadya, finally! I'm tired of writing, and you're tired of reading.
