It is very convenient to stuff such pancakes when they are at hand.
I just fold the pancakes into quarters, in a bag and in the freezer - especially when the pancakes are overeat, and the excess remains. Sometimes I put in a bag in portions, how much we eat for breakfast.
And sometimes I bake more specials, including for the freezer. They are stored very well, I just put them in the refrigerator at night and they will defrost by morning. Then I unfold it carefully.
