Pumpkin, apple and walnut salad with honey-citrus dressing

Ingredients

Pumpkin sweet sliced 1 tbsp.
Large sweet and sour apple 1 PC.
Orange juice and zest 0.5 pcs.
Lemon juice 1.4 pcs.
Raisins (seedless grapes) handful
Walnuts handful
Brown sugar 1-2 tsp
Prunes 8 pcs.
Ground cinnamon 0.5 tsp
Liquid floral honey 4 tsp
Rum or cognac (optional) 1-2 tbsp. l.
In the absence of a post, whipped cream, sour cream for serving 4 tbsp. l.

Cooking method

  • Something for a long time did not indulge in fruit salads. And here recently I stuffed apples with pumpkin with nuts and citrus additives, we really liked the combination. This is how this salad was invented, suitable for both fasting and normal times.
  • - Peel and cut the sweet pumpkin of dessert varieties into very small cubes (4 mm side), sprinkle with sugar, add the washed and squeezed raisins and pour over with a mixture of orange and lemon juice. Cover the bowl with foil and send it to the refrigerator at least overnight (I have a day) for insisting. For lovers of a pleasant rum note, add a couple of spoons of rum. It would be nice to stir this mixture several times so that the pumpkin is evenly marinated with juice.
  • - Before serving, cut the peeled apple like an Antonovka, stir quickly so that the apple does not darken.
  • - Add nuts to the salad, lightly soaked prunes, sprinkle with cinnamon and pour over honey to taste. Let it brew for 15 minutes.
  • Garnish with whipped cream or sour cream if desired.
  • Help yourself! Very, very tasty, healthy and simple!
  • If the teeth do not allow the crunch of the diced pumpkin, then grate it on a coarse grater.

Note

Of course, this salad needs a sweet juicy pumpkin. Kiwi and dried apricots can be used in a salad. I also liked to season with guelder-rose jam with homemade honey.
