Genoese focaccia with potatoes

Ingredients

Jacket boiled potatoes 1 PC.
Milk / whey / any other tasty liquid / water 100 ml
Flour 200 g
Salt 1 tsp
Sugar 1 tsp
Yeast 1 tsp
Olive oil / other vegetable / fat 25 g
Hard cheese 50 g
Ginger, nutmeg, pepper (optional) taste

Cooking method

  • Peel and crush the potatoes into puree.
  • Send mashed potatoes, liquid (I baked on cheese skim), flour, salt, sugar, yeast to the bread maker, knead the dough. After the first kneading, add butter, grated (or, as in this case, cut into tiny cubes) cheese and spices. At the end of the kneading program, place the dough in the Princess skillet and let rise to the rim. Bake for 10-12 minutes from cold.

Reduced the amount of fat by 3 times: in my opinion, no Italians can stand 75 g of it per 200 g of flour ... Another change: I was too lazy to rub the cheese, cut it finely. Before baking, on top of the picsfell with a Mexican mixture of spices with salt (which jar came to hand, you cansplay whatever).

ninza, in my LG "dough" mode - 1 hour 03 minutes. As a matter of fact, it is not so important how long it lasts: you can knead it with your hands; the main thing: 1st batch - rest - 2nd batch - rise - kneading, shape (frying pan) - proofing - baking.

The dough is not too dense, rather soft, but still should not smear.It turned out to be liquid, probably from the humidity of the air and from the wateriness of the potatoes. Added flour - right.
