Ingredients

Beef meat 500 gr.
Bay leaf, peppercorns taste
Sausages 2-3 pcs.
Smoked sausage 300 gr.
Bulb onions 2-3 pcs.
Pickled cucumbers 100 g
Green olives 1 ban.
Tomato paste 70 gr.
Capers and potatoes optional
Lemon, herbs, sour cream for serving

Cooking method

  • There are a lot of recipes for the Solyanka team, each has its own version, I present to you the version of the Solyanka, which has become traditional for me. In general, I like the hodgepodge because of the lack of strictness to ingredients and their interchangeability.
  • So, meat is better on bone, or even bone is possible, even better. It is better to take sausages of the Vienna type in a collagen casing. There are no restrictions in the choice of smoked meats at all, I usually use a pack of Picolini sausages with bacon, but this time there was a bunch of slices from the holiday and it went into action. Capers are desirable but not required. They usually don't put potatoes at all, but I saw someone in the recipe, tried it and it seemed better and more satisfying.
  • Let's start cooking.
  • Put meat, onions, bay leaves, peppercorns in boiling water (2.5 liters). When the broth is ready, remove the meat and cool, strain the broth through a sieve (this is not necessary, but if there is time it is desirable).
  • Put potatoes in the broth (if you decide to put it, I add it for satiety) and put on a small fire so that the potatoes boil.
  • We do the frying. Cut the onion into strips (half rings), fry in oil for 5 minutes, then add the cucumbers, smoked meats, sausages and finely chopped meat from the broth, fill with tomato paste, fry for 10 minutes over medium heat.
  • We put the frying in the broth, add olives and capers, if any, let it brew for 5-10 minutes and our hodgepodge is ready!
