Apples, peeled from seeds 150 g
Potato starch 20 g
Granulated sugar 30 g
Powdered sugar for decoration

Cooking method

  • What was my surprise to wake up today from the sounds of a spring drip. This is in Siberia, and practically in the middle of December ...
  • Fresh frozen cherries melted sadly on the balcony 🍒. Well, I couldn't leave her there, I had to save her, especially since all the baking was just running out in the house.
  • The presence of a 7-month-old baby and the absence of assistants did not allow me to do the artistic modeling of the usual pies, I needed something simpler and faster.
  • I decided to conduct an experiment: make my favorite yeast dough, but add less flour to it and make a jellied pie. I was afraid that it would turn out to be a big pancake with filling, but in vain! It turned out to be a very tasty cake, homemade people even asked to write down the recipe for regular repetition.
  • Dough
  • Usually I make butter dough on milk, but since there were only 120 g of milk residues, I added another 80 g of warm water. We dissolve sugar, salt, butter in the liquid, break the eggs, crumbling yeast (I take 3 times less dry yeast than pressed), gradually introduce flour and quickly knead the dough until smooth. The consistency of the dough turned out to be like yeast pancakes: it seems liquid, but practically does not flow:

  • The dough was sent to the microwave to rise, in which I heated the milk for the dough. As a result, after 45-50 minutes, the dough grew by about 2.5 times. During this time, you need to prepare stuffing:
  • We remove the seed pods from the apples, cut them into not very small pieces so that there is no excessive release of juice, add starch and granulated sugar. It is better to add cherries directly when forming the cake, otherwise there will be a lot of juice.
  • The risen dough was sedated with a spoon and started to "sculpt" the cake.

  • I put half the dough in a silicone mold, put the apple-sugar-starch mixture on the dough

  • Spread cherries on apples, previously draining the leaked juice

  • Covered the filling with the 2nd half of the dough, put the cake in a bag and left it warm for proofing

  • It was baked in an oven preheated to 180 degrees for about 30 minutes.

  • To be honest, I never expected such a delicate, airy, literally, crumbly structure. And cardamom and vanillin combined with an apple and cherry simply explode the taste buds ... In general, I was very pleased with the result of today's experiment!

The pie is very tender, you need to take it out of the mold carefully, preferably partially cooled.
Taste completely cooled!
I have a silicone mold, so there was no need to lubricate it. If the form is simple, grease and sprinkle with breadcrumbs, otherwise it will stick.
Mold diameter 27 cm.
The finished cake weighs exactly 1 kg

And then I found your recipe. So far, I took the recipe for this pie dough as a basis and baked 2 pies, one with meat filling, and one with fish and cabbage. What a deliciousness it is. This dough is just a lifesaver when you don't want to bother with long kneading, rolling the dough and sculpting a pie.

I did not dilute milk with water. And for the one with cabbage, I added only one last egg to the dough. I baked these pies in the Miracle Oven. Vkusnotaaa. Next in line are pies with berries, sweet. No, I don't put my miracle on the gas, everything is fried perfectly from below in it. At the bottom of my Miracle stove inside the box (or put, as it is right), a fiberglass mat (not silicone) cut with handles, as it were. This rug is inexpensive, I took it from Fix Price. By the diameter of the bottom, Miracles cut a circle out of this rug, but left uncut strips about 8 cm wide and about the same length on two opposite sides. I take it by one side, pull it (tilting the Miracle oven over the table) and pull out this rug along with the pie. It is more convenient to pull out with a rug. When the cake has cooled down a little I take out the rug and leave the cake on the wire rack (stand) to cool further.
