Cottage cheese casserole with pineapple

Ingredients

cottage cheese (I have 9% in packs) 750 g
pineapple (canned) 7 rings
eggs 3 pcs.
semolina 3 tsp (15 g)
granulated sugar 3 tbsp. l. (75 g)
raisins 2 tbsp. l. (50 g)
zest of 1 lemon
vanilla sugar 1 tsp (10 g)

Cooking method

  • We wash the raisins and soak for 30 minutes in hot water. Then we put it back on a sieve and let the water drain. After that, put the raisins on a napkin and dry them.
  • Put the pineapple rings in a colander, let the liquid drain, then dry with napkins.
  • We turn on the oven (set the temperature to 180 degrees) so that it warms up while preparing the curd mass.
  • Separate one egg yolk and set the cup aside for now.
  • Beat the protein and 2 eggs with a mixer with sugar.
  • We mix cottage cheese (I usually rub the cottage cheese through a sieve) with semolina, finely grated lemon zest, vanilla sugar and raisins.
  • Add eggs beaten with sugar and mix (I used a mixer again).

  • Grease a round baking dish with a diameter of 24 cm (no longer needed, and the smaller one will not fit pineapple rings) grease with butter and sprinkle with flour, semolina or bread crumbs (you can line the baking dish with baking paper). If you use it not for the first time, you do not need to lubricate the silicone form - just moisten it with water.
  • Put the pineapple rings on the bottom of the mold.

  • Spread the curd mass on pineapples and level.
  • Lightly beat the remaining yolk and grease the surface of the curd mass with it.

  • We put the mold in a heated oven.
  • The baking time in the magazine recipe is 40 minutes, but I have a gas oven with only one bottom heating and it took longer - about an hour at 180 degrees (be guided by the properties of your oven).
  • Tip: You should not open the oven earlier than half an hour from the start of baking (or it is better not to open it at all until the end of baking) - the oven gets cold and the casserole falls off. Also, do not slam the oven door.
  • The finished casserole should cool down in the oven gradually: for the first 10-15 minutes, you just need to turn off the oven (unless, of course, the casserole is not too dark on top so as not to burn out), and then open the oven door. The casserole will, of course, fall off when it cools, but quite a bit - the top will be even.

  • Then, covering the dish with the cooled casserole dish, turn over so that the pineapple rings are on top.

Note

The combination of cottage cheese with pineapple is simply excellent. And the appearance of the casserole is cute.

At first, I had big doubts about the quantity and set of ingredients. I looked through many similar recipes on the Internet, but still decided to cook, without deviating from this recipe, only increased the amount of vanilla sugar (the magazine indicated 1/4 teaspoon). I deciphered the weight of some of the ingredients and added a bit to the description of the preparation.
