Ingredients

Flour from soft wheat 200 g (added 1 tablespoon without top)
Medium eggs 2 pcs
Yolks 2 pcs
Milk 6% (I have milk + cream) 100 ml
Olive oil (extra virgin) 100 ml
Sugar 200 g
Baking powder 7 g
Vanilla sugar 1 tbsp. l.
Raisins (optional)
Pine nuts or pine nuts 100 g
Recommended cream composition:
Milk 6% 250 ml
Egg yolks 3 pcs
Wheat flour, sifted 4 tbsp. l.
Vanilla sugar 1 tbsp. l.
Granulated sugar 3 tbsp. l.

Cooking method

  • Having visited Italy several times, we became addicted to baking pies and muffins in pure olive oil. Well, we really like this unique flavor that olive oil gives to the dough.
  • This cake from Dario Cecchini was published by the famous blogger Ella Martino, who lives in Italy and popularizes Italian cuisine here.
  • We expected it to be delicious, but the cake turned out to be so great, crumbly, soft, delightfully aromatic that our family condemned it in one sitting. He didn't even have time to cool down completely. It goes well with a good liquor and a cup of coffee.
  • Surprisingly, in the absence of citrus components, a citrus note is clearly felt in the taste. Perhaps this effect is due to pine or olive oil. By the way, I chose the most vigorous oil for this recipe - dark green and tart.
  • Vanilla custard was planned for the pie, but this muffin pie turned out to be quite self-sufficient. The taste of aromatic fatty pine nuts (pine nuts), in my opinion, completely replaces the cream. With all this, the cake is prepared very quickly, like a regular muffin.
  • Preparation
  • All foods should be at the same room temperature.
  • - Preheat oven to 190 degrees. Lubricate the split or silicone mold with olive oil. To be sure, I sprinkled with corn oatmeal (I advise everyone for sprinkling).
  • - Beat eggs, yolks and granulated sugar with a mixer. The mass should increase in volume at least 2 times. This is an important point!
  • - Pour olive oil into beaten eggs, add vanilla sugar and milk. Mix it all well.
  • - Add sifted flour with baking powder to the mixture and stir until the lumps disappear, but without fanaticism, so as not to preserve the airiness of the cake.

  • - Pour the dough into the prepared mold, sprinkle with pine nuts or cedar nuts on top. Place in the preheated oven and bake the cake for about 40 minutes. Take a look in your oven. I recommend covering the top with foil or a non-stick mat after 15-20 minutes.
  • - Allow the cake to cool almost completely in the tin and remove carefully.
  • Cream
  • (Until I did it, any custard will do, up to chocolate or caramel salted. Something for me is 3 yolks too much for 250 ml of milk, I would add 2 ...)
  • - Grind the yolks with sugar until white, add a little milk and mix everything with flour and vanilla sugar until there are no lumps.
  • - Bring the rest of the milk to a boil and pour, constantly stirring, in a thin stream into the yolks, bring the mixture to the first "gurgles", stirring constantly, remove from heat and cool under a film. Smear the pie or just serve them on a saucer with the pie. I like the second option better.
  • Highly recommend for those who are tired of regular cupcakes and want to experience the Italian flavor.

Note

The author recommends taking a shape 27 cm in diameter, this shape seemed too big to me, I would take a shape of 24-25 cm, the cake will turn out taller.
I added salt to the dough from myself.
Nuts can also be added to the dough. I added raisins to the dough, which Italians often do.
