Natalochka cake (based on the Sorceress cake)

Ingredients

DOUGH
Large eggs 2 pcs.
Sugar 180 g
Sour cream 20% 200 ml
Condensed milk 0.5 cans (125 ml)
Flour 2 tbsp.
Baking powder 1 tsp
CREAM
Sour cream 2 tbsp. l. on horseback
Softened butter 200 g
Condensed milk (optional, add a spoonful of brandy or vanilla sugar) 0.5 cans (125 ml)
INTERLAYER
Prunes 15-20 pcs.
Sugar 1 tbsp. l.
Lemon juice 1 tbsp. l.
Zest 0.5 lemon
GLAZE
Favorite chocolate icing I have 100 g of chocolate, 35 ml of cream 20%
FOR DECORATION AND IN INTERLAYER 10-15 pieces of walnuts
Standard measuring cup 240 ml

Cooking method

  • My husband remembered the old days when, for lack of a better thing, they baked simple homemade cakes on condensed milk. And my recipe from the "Grocery School" was already open from 2009, all eyes were blisters, but my hands did not reach.
  • I looked at the recipe, and it seemed somehow simple to me - nevertheless, we were spoiled here at the Bread Maker! )
  • So I took the recipe as a basis, and from myself I came up with a layer of prunes with lemon zest and lemon juice, added sour cream to the fat cream, thus reducing the excessive, in my opinion, sweetness of the cream and giving it a certain airiness. Reduced the amount of sugar in the cakes from 200 g to 180 g - keep this in mind, sweet tooth! Yes, and not divided the cake into two thick parts, but into three, so that the cream is better distributed in the cake.
  • The result was very pleasing, especially on the second day.
  • The result is a delicious, not very laborious cake, hearty and very profitable in terms of serving.
  • Just a real solid homemade cake! I recommend trying
  • PREPARING THE DOUGH
  • All dough products must be at the same temperature
  • - Beat eggs with sugar until white, add sour cream and condensed milk. Mix everything well and gradually add sifted flour with baking powder into the mixture. Stir without fanaticism until the lumps disappear.

  • - Grease a detachable baking dish (I took a silicone one for speed), sprinkle a little flour with a strainer and lay out the dough in an even layer. Twist the form so that the dough is better distributed. (If you are not sure of your shape, you can pave the bottom with baking paper, cutting it to the size of the base of the form.)
  • - Bake the cake in a preheated to 180 g C oven without convection for about 30 minutes (watch the top, if it starts to fry strongly, then cover the top with foil, paper or a baking mat)
  • - Remove the cake from the oven and allow to cool slightly in the mold, then carefully remove from the mold and cut into three pieces. The cake is cut very well.
  • CREAM
  • - Beat butter (room temperature) to white and gradually add condensed milk and whisk until creamy. At the end, stir in the sour cream. Here you need not to interrupt the cream so that the serum does not leave the sour cream. Sour cream should be at room temperature.
  • You can add a spoonful of cognac or vanilla sugar to the cream if you wish.
  • INTERLAYER
  • - Grate the zest from half a medium lemon. Squeeze 1 tbsp of lemon. l. juice.
  • - Wash the prunes, steam them a little in hot boiled water, then free them from the seeds. Prunes should not be too steamed, as if slightly dried.
  • - Grind prunes with lemon juice, sugar and lemon zest in a chopper or with a knife from a blender. You should get a thick mass, which, however, can be spread over the cake. If it turns out very thick, then you can add a spoonful of water or syrup from your favorite jam (cherry is very suitable).

  • ASSEMBLY
  • - Spread half of the cream on the bottom cake, then sprinkle with walnuts, chopped into small pieces. Cover with a second cake layer.

  • - Spread a thin layer of prunes evenly over the second cake layer with a spatula.

  • Then lay out the other half of the cream. Cover the third with the cake.
  • - Pour the top of the cake with chocolate icing. (I am doing it simply. I heat the chocolate with cream at 600 power for about 1.5 minutes, stir and distribute the icing over the cake.)
  • Smear the icing that has dripped onto the side of the cake with a spatula, you can sprinkle it with nuts immediately.
  • If the glaze is uneven, sprinkle the top with cocoa powder.
  • - Let the cake stand for at least a night, and preferably a day.
  • Natalochka cake (based on the Sorceress cake)

It didn't take long to think about it!
