  • Chocolate manna with ricotta and coconut

The dish is designed for

12 pcs.

Time for preparing:

1.5 h

Cooking program:

Handles + oven

Note

Kefir can be replaced with yogurt. In this case, it is better to reduce the amount of sugar. The last time I baked with kefir and apple juice 50/50, I also took less sugar.
Instead of ricotta, you can use cottage cheese, the main thing is that it is not excessively moist and does not contain vegetable fat, otherwise the manna will not bake.
If the oven is in the 1st large mold, you can pour 2/3 of the dough into the mold, spread the filling with a spoon in a chaotic manner, pour in the remaining 1/3 of the dough. The baking time will increase accordingly.
In the case of using cottage cheese, you can add 1 tbsp to the filling. l. flour, roll up the balls, freeze them in the freezer and press deeper into the dough, then it will turn out like this:

Mandarinka @, Marisha, how to cook -!
Shyrshunchik
Mandarinka @Marina baked manniks yesterday, but they did not rise very much, like everything was according to the recipe, they turned out delicious and the middle reminded of sour cream makers :) and I love them very much. But this morning I found out that they fell off me and the middle was pulled in. Maybe it should be so? maybe you have a different baking powder or kefir? The picture shows it the next day.

Mandarinka @
Shyrshunchik, I went up quite well, the middle also even became a little porous. They did not fall off on the 3rd day. I baked a lot, I had the opportunity to watch. Baking powder is ordinary, purchased. By the way, recently my pie didn't rise at all, I just blame the new baking powder. Kefir is the most common, 2.5% fat ...
Maybe the manniks weren't baked a little? or was the dough runny?
Shyrshunchik
Maybe baking powder, next time when I bake I will try to extinguish the soda with vinegar using the old-fashioned method, and so they baked and the middle became porous.
Mandarinka @
Shyrshunchik, the fact of the matter is that manniks have a very elastic porous structure, so I had no idea that he could fall
The main thing is that it did not spoil the taste!
Trishka
Mandarinka @, Marisha, thank you for the cupcakes!

Mandarinka @, Marina, thanks for the recipe!
Very nice things turned out. And such an interesting combination of rough chocolate dough and tender coconut filling!
My family, however, were not very impressed with something (they are generally wary of everything new), but at work they dared instantly.
Here are the results:
Chocolate manna with ricotta and coconut
The filling "drowned" almost completely, everyone was surprised how I managed to push it inside
Mandarinka @
SvetaI, what a beauty
Please, Sveta, and thanks for the photo! Yes, yes, this is exactly what I like about the manna and I like that the structure is so large!
Yesterday I took out the same form from the bins and thought what to cook in it, the cells are quite miniature ... Now I know that manniks in it will turn out great
biankausa
And I forgot to put sugar in the dough, they were baked nice but tasteless.
Mandarinka @
biankausa, make a sweet frosting and let it soak
Mandarinka @
Well, I missed the mannichkas. I did it again with ricotta, everything worked out
