Slow Cooker Lean Ginger Soup

Ingredients

Lean oil without contamination 1 tbsp. l
Carrots 500g for soup, 300-500 for juice 800-1000g
Potatoes 100g
Bulb onions 50g
Brown sugar 0.5-1 tsp
Fresh ginger 15g
Water (boiling water) 500 ml
Salt taste

Cooking method

  • Put the slow cooker on the HIGH mode (90-100 degrees C) for 20 minutes.
  • Take 500g carrots, 100g potatoes and 1/2 small onion, peel and wash.
  • Finely chop the onion, and cut the carrots and potatoes in half lengthwise, then crosswise into a 1 cm thick slice.
  • Peel and grate ginger.
  • Heat 1 tbsp in a thick-walled skillet about 26 cm in diameter. l odorless vegetable oil. Place the onions, carrots and katrofel. reduce heat to medium and soften vegetables, without bringing them to frying for about 6-8 minutes, with constant stirring. Sprinkle on top 0.5-1 hours. l. brown sugar depending on the sweetness of the carrots and cook everything for another 1 minute.
  • Add 250 ml of hot water and bring to a boil. Cook for 3-5 minutes and pour gently from the pan into the slow-cooker bowl. Add some salt
  • another 250 ml of boiling water and grated ginger. Cover and cook on HIGH mode for 3 hours until the carrots are completely soft. With an immersion blender, puree the soup right in the bowl.
  • We make juice from the remaining carrots using a juicer. Add 250 ml of this juice to the slow cooker bowl, stir, taste and invite everyone to the table.
