Ingredients

butter (margarine) 150 g

wheat flour 250 g
yolk 1 PC.

Cooking method

  • All foods should be at room temperature. The oil must be removed from the refrigerator in advance so that it becomes soft. Rinse raisins in hot water and dry. Finely chop the candied orange peels. I used the zest grated with 1 lemon.
  • You need to add a little spice to the cookies so that the taste is not spicy, but only with a spicy touch. The minimum set of spices: ground cinnamon, ground ginger, nutmeg, ground cardamom seeds. Total spices should be 1 tsp. I used spices for coffee and desserts (Camis in the mill) + cinnamon (0.5 tsp) + cloves (on the tip of a knife)
  • Beat soft butter (I used margarine) with sugar until smooth, white mass. Add yolk and a pinch of salt.
  • Mix flour with spices and mix half with butter. Add the prepared raisins and candied fruits to the dough.
  • Add the remaining flour and knead the dough with your hands. At first, it may crumble a little, but you continue to stir, under the warmth of your hands the dough will become obedient. You don't need to knead for long.
  • Then the dough must be sent to the refrigerator for a couple of hours. You can just form a couple of lumps, put it in a bag and send it to the refrigerator, or you can form a flat sausage, then the dough does not need to be rolled out after the refrigerator.
  • In the refrigerator, the butter will harden and the dough will become hard. After taking out a sausage of dough from the refrigerator, you just need to cut it into pieces of the same thickness. If you are satisfied with round cookies, then you just need to roll the cut washers a little with a rolling pin and the cookies are ready. If the cookies crumble very much during cutting and rolling, wait five minutes, the dough will melt and will not crumble. I didn’t wait, but squeezed it a little with warm hands, after which it became soft and pliable.
  • The cookie should be about 8 millimeters thick. You can cut cookies with cookie cutters. I made rectangular cookies by cutting the dough with a curly roller knife.
  • Put the formed cookies on a baking sheet. Beat the protein thoroughly. Spread the top of the cookies with a culinary brush and sprinkle with sugar crystals (you can use a dark one).
  • Bake in an oven heated to 180 ° C until light golden brown (10-15 minutes). Use a spatula to remove the brittle biscuits from the baking sheet and cool on a wire rack.

Note

It is recommended to use small raisins for cookies. If you don't have candied orange peels and can't make them, you can replace them with fresh orange or lemon peel.
