instant yeast 1.7 grams
sea ​​salt 10 grams

Cooking method

  • Feed the sourdough 6-8 hours before baking the day before.
  • Mix flour with gluten (if flour is regular) and yeast.
  • Mix water with sourdough.
  • Kneading was carried out in KhP using the "Dough" program (5 * 5 * 10)
  • After kneading for 5 minutes, add salt.
  • Monge baguettes The dough is dense, does not stick.
  • Round the dough, put it in a warm place in a greased dish for 20 minutes.
  • Get it. Divide into 3 parts using scales.
  • Tuck each part and leave under the foil for another 40 minutes.
  • Form the baguettes and lay them seam side up on a floured linen cloth. Cover.
  • Proofing 75-90 minutes.
  • Preheat the oven with the stone 50 minutes before baking.
  • Turn baguettes onto paper, make cuts.
  • Baking at a temperature of 240-250 degrees for the first 10 minutes with steam.
  • Remove the steam, reduce the temperature to 200 degrees and bake for another 10-15 minutes. We focus on our oven.
