Japanese quince jelly with thyme

Ingredients

japonica
water
sugar
citric acid or lemon juice
thyme (small bunch)

Cooking method

  • I needed jelly for the recipe Linz cake with quince and beetroot, I made it from the quince that grows in my country house.
  • Cut the quince into two parts. There is no need to cleanse the skin and remove seeds, they contain a lot of pectin.
  • Pour the chopped fruits with water so that it barely covers them, and cook until soft.
  • Strain the resulting juice through cheesecloth or a sieve, without pressing, so that the juice is transparent.
  • Add sugar (800 g of sugar is added to 1 liter of juice), a bunch of thyme and cook until the required density.
  • At the end of cooking, add 3-4 g of citric acid (per 1 liter), or lemon juice (~ 1 tbsp. L), and pour hot into jars, after removing the thyme.
  • The quince pulp remaining from the juice can be used to make jam.

Why citric acid? Japanese quince already gives acid, I make a preparation like lemon sugar from it. Stands in the fridge like lemons with sugar.
