Eggs 3 pcs
Powdered sugar 150 g
Lemon zest 1 tsp
Vanilla sugar 1 tsp
Shortbread 200 g
Butter 110 g

Cooking method

For me, this is the most delicious cake that you can hardly buy from us, that is, there are a lot of cakes with the name cheesecake, but you can't buy a real cheesecake, even in Seleznev's confectionery they sell cottage cheese, and a real cheesecake is made only from cream cheese and no cottage cheese, of course a classic only Philadelphia, but we do not sell it now, so I replaced it with Mascarpone 250 gr, Ricotta 250 gr and Almetta creamy 2 cans.
  • Preparation:
  • 1. Grind cookies in crumb, add butter, melted beforehand. I did it in a blender glass. We take the mold and distribute the crumb along the bottom and sides of the mold. Preheat the oven to 160 and bake the crumb for 10 minutes.
  • 2. All ingredients for the cream should be at room temperature. Whisk the cream cheese with powdered sugar until smooth,
  • gradually add cream, vanilla and eggs one at a time, stirring after each. Beat quickly and gently. The mass should not be overwhelmed.
  • 3. Pour the cream over the base into a mold and bake at 140 with convection for 1 hour, after baking the cheesecake should wobble in the center (it will come in the refrigerator) then do not open the oven until the cheesecake cools down. After cooling down completely, take it out of the mold and let it go in the refrigerator. I baked in a mini oven, preferably in a large oven in a water bath.
