Ingredients

Any vegetables other than tomatoes:
zucchini
carrot
eggplant
Sweet pepper
cauliflower (well Brussels sprouts)
celery (which one do you like - I have a root)
onions (for an amateur - I don't like it here) - leek, onion, red, white ...
...
and other vegetables ...
Small champignons
Spices or herbs
Olive oil (vegetable)
Salt
Soy sauce

Cooking method

  • In general, this is not a recipe. And the method of cooking vegetables is grilled in the absence of it on the farm. It turns out amazingly tasty and fast. It is not necessary to cook them along the way, since everything goes one by one.
  • Vegetables, here they are
  • Grilled vegetables (no grill) plus more carrots.
  • First, peel the eggplant and cut it coarsely (about 4 cm). Rub with a small amount of coarse salt. Let's do the same with zucchini. If the skin is thin, it is better not to peel it. Let's put them aside. The eggplant will give off bitterness, and the zucchini will be slightly salted.
  • During this time, we will also coarsely chop all other vegetables. The carrots are cut depending on the expected effect - with 4 cm washers. Disassemble the cauliflower into inflorescences, but do not grind it - it should be slightly crunchy. Put the mushrooms whole.
  • Grilled vegetables (no grill)
  • Now we send all the vegetables to the microwave. We cover tightly with a lid, and on top there is a lid for the micra. The valve must be open. Now set the micra to 800 and turn it on for 5 minutes. Take out (CAUTION! HOT!) And mix gently. The vegetables have slightly decreased in size.
  • Now we take a frying pan, so that light burning is not scary for it. And we put on a big fire to glow. DO NOT DRINK OIL!
  • Again vegetables in micra and another 5 minutes. During this time, the pan got hot. The vegetables have shrunk enough and a vegetable broth has gathered inside.
  • Grilled vegetables (no grill)
  • First, pour the vegetables from the micra into a colander to drain the broth. And then immediately into the pan. CAUTION! HOT!

  • Now, without reducing the heat, fry for 30 seconds, then mix well and fry for another 30 seconds. We make the gas a little quieter. We repeat the frying-stirring procedure 4-5 times. By color and density, determining the level of readiness. We turn off the gas. Now I advise you to pepper the vegetables (it is better to add salt on a plate later, since you should oversalt the hot vegetables just once), sprinkle with dried aromatic herb, pour with olive oil and soy sauce. To cover with a lid. Serve after 5-10 minutes.
  • It's insanely delicious.

The principle of the recipe is based on very strong heating of vegetables inside and then frying in a dry hot frying pan. The recipe was rewritten a long time ago from the instructions for the microwave oven and ... forgotten. Recently I found something similar on the Internet, dug up the notes and cook without stopping. I love grilled vegetables with soy sauce and olive oil, sprinkled with all this freshly ground pepper and a sprig of rosemary from a flowerpot.

Tumanchik, Irishkina, Thank you so much. I've been suffering for what year, of those cafes / restaurants I visit, only one serves decent grilled vegetables, as it should. And the price tag in it is not humane.
Today I tried to cook it myself, it turned out great. The only thing is, Bulgarian pepper will be enough, I think, and just a frying pan or just a minute in a micro before frying.
