Parmesan cheese 50-100gr

Cooking method

  • My pie is a variation on the wonderful French quiche with leeks from the author of the flavor blog:
  • Many thanks to her for the recipe, which I use quite often, and generally took the dough as the basis of my pies.
  • In fact, I really wanted to bake a pie with goat cheese and caramelized onions. But I got a sheep cheese, and I didn't want to bother with the onion))
  • So we prepare from what is:
  • Dough:
  • Stir in flour, 125 grams of butter, 1 egg, a pinch of salt.
  • Knead the dough using your favorite assistant - a bread maker, wrap it in a whip and leave in the refrigerator for 1 hour.
  • After roll out, put in a mold, pierce with a fork.
  • In order for the base to turn out thin, cover the dough in the form with parchment paper and pour some kind of load on top (I have beans).
  • Send to an oven preheated to 180 C for 10-15 minutes.
  • Filling:
  • Cut the leeks into medium slices, fry in 2 tablespoons of butter. The onion should become soft.
  • Grate cheese on a coarse grater (I already had very hard cheese), mix with ricotta. Ricotta is needed in order to dilute the sharp taste of "sheep". If you have goat cheese, or like the taste of sheep, then you can not add ricotta, but take all 250 grams of cheese (feta cheese).
  • Beat the eggs with cream, mix with the cheese mass and half of the grated Parmesan, add a small pinch of pepper and nutmeg, add a little salt.
  • Put a layer of leeks on the bottom of the finished dough frames, fill with cheese filling and sprinkle with the remaining Parmesan on top.
  • We put in the oven and bake at 180 degrees for another 30-35 minutes.
