Jam, or red caviar from egg yolks

Ingredients

Fresh yolks 4 things.
Sugar 1 glass
Salt 1 glass

Cooking method

  • Combine and mix well salt and sugar. After pouring half of the mixture into the container, spread the yolks on it (for the first time I decided to cook half of the portion).
  • Jam, or red caviar from egg yolks
  • Pour the rest of the "pickling" mixture on top, covering the yolks with it.
  • Jam, or red caviar from egg yolks
  • And forget about them for three hours. Then carefully "dig out" the dried yolks,

  • rinse them under running cold water,

  • and having spread on fresh bread, have fun!
  • Jam, or red caviar from egg yolks
  • Most of those who have tried and appreciated this dish agreed with me that it is very reminiscent of red caviar. And this made me continue the experiment. First, I pierced the yolks. Secondly, I changed the proportions of the mixture: I took two parts of sugar into three parts of salt. Thirdly, I kept the yolks in the mixture for 10 hours. And finally, after chopping the finished yolks, mixed them with a few drops of fish oil! And much cheaper, but no less tasty generic analogue of red caviar - ready!

Note

Having met this extravagant recipe on the Internet, I immediately wanted to repeat it and was surprised how delicious it was!

How does it taste?
Delicious, Natasha! The yolk becomes plump, in consistency (and even a little to taste) it looks like smeared red caviar!

Wow, this is just for bookmarks and bread for my men.

Larissa, a wonderful recipe. I will definitely repeat it. Thanks for the amazing recipe.

Oh girls, I'm suffering with the tablet .....
How can I not check everything ... the word is reversed ...

These are frozen yolks.
My son only eats protein, but collects yolks in the freezer for me!

Girls, lovely, thanks for your interest!
Ah, ice creams, Lily? Then why can't it work? They were frozen fresh! And closed? That is, not dry in the freezer? Defrost - and go!

To say that I was surprised is to say nothing ...
Larissa, Thank you!!! I remember when I was a child I read fairy tales with the same interest as now your recipes. You will never guess what flight of fantasy you have today.

Quite extravagant and curious!

gala10, Checkmark, you know how to praise! Straight, caressed!
Gala, Angela, Lily, both Natasha, Marina, thanks for stopping by and checking in! I also thought that there was little to surprise us with anything, but it turns out there are still "inscrutable ways". And it's great!

Well it is clear. But in the name something "jam", that is, a sweet dish.
dopleta
I hesitated for a very long time, coming up with a name. Well - it spreads like jam. Again, there is a lot of sugar. But not fruit! Therefore, I quoted!

Laris, but I will make up my mind, just tell me, and the mixture of salt and sugar can be reused, suddenly I want to eat this every day

If creative means Larisa. Very interesting and informative. Larissa, as always, you are at the height of your culinary delights.

Larissa, I am very interested in this jam, I will definitely cook it!

In the sense of? Cured yolks? So that those who do not own it climb for the translation? Do you think I'm so cruel towards members of the forum?

just tell me
Nadia, well done! The mixture becomes a little damp, so right away - definitely not. And the next day it will dry out. Only it will be necessary to crush it slightly - and into battle!
Oh, Tanechka, so glad ! Lights, and thank you for your attention to the recipe!

We still have a Russian-language site. We have already discussed this issue during the German competition. If an import name is given, then only in brackets after the Russian.

I was thinking ... but I could not attach it to the recipe. I decided, okay, since I can't think of anything worthwhile, I'll pretend that (for the first time in my life) I'm not interested in the size of eggs.

Well, why - you can, of course, but it's better not to start, otherwise I won't stop later. I'd rather dream like this But it's interesting: you can't plant this substance through a confectionery nozzle with peas so that caviar-caviar is? And fool the people
Elena Tim
Yeah, and before the donkey paska ...

Let's wait

PS: I was interested in the name "Jam" from yolks ". I read it ... But I wanted to try it when I read what it tasted like caviar. I'll try. The thought flashes to change the balance of sugar and salt for a more specific effect.Someone salty, and someone sweet ...

to have caviar-caviar?
No, Anya, here the consistency is not the same - for "eggs" something more jelly and juicy is required, and this is just a thick, "dried", tasty yolk.
Waist, Natasha, do it, do not be lazy, your opinion is also interesting to me! By the way, they are not so sweet. OK, try ! And thanks !

dopleta, Larissa!
I will wait for the continuation of the experiment from those who ran to the kitchen ... There are even village eggs ... so "as soon as possible"!
Premier
Larissa! I am so impressed with your recipe ...

that I wentogle it, how to translate the name correctly, and found additional information. Different sources give different amounts of time for salting - from 70 minutes to a day. And I also found a slightly different way. There the curing mixture consists of salt and sugar in a ratio of 9: 1, and the process takes 2 weeks. Then the yolks are dried in the air. In a crushed form (such a beautiful shavings are obtained), they are used as a seasoning for pasta, vegetable dishes, etc. Well, in any case, I understood that from English. The aroma, they say, is awesome!

Quote: Kokoschka
Do you think spawned yolks will do?
Sorry to get in, but, as they say, I cannot remain silent.
The yolks change their structure during the freezing process. This behavior is successfully used in molecular cooking. Whole raw eggs are placed in the freezer for a day or two, then taken out, thawed, broken, the protein is used as usual (nothing is done to it), and the yolk is just spread on bread ...
And to prevent such a change in the yolks, they are thoroughly mixed with the addition of salt before freezing.
Probably, on HP about it somewhere written, it cannot be that it was not.
dopleta
Premier, Olya, I am very impressed by your "in everything I want to get to the very essence"!
Dopletin's husband came home from work and was offended ... They didn't leave him to try the yolk-jam caviar! Ducks for dinner are not enough for him!
Wildebeest
dopleta, duck duck, and caviar caviar. I would also be offended. You, Larissa, will have to spawn.
Because of you, spawning has begun on our HP.

Wildebeest
dopleta, we always have a season.
