Ingredients

pumpkin puree 150 g
milk 125 g
wheat flour 500 g
butter (room temperature) 60 g
sugar 40 g
salt 10 g
fresh yeast 15 g
egg yolks 2 pcs
whole egg 1 PC
For coating
1 egg + a pinch of salt
For ponytails
nuts (I took peanuts) by the number of buns approx 30 pcs

  • 1. First, make pumpkin puree.

  • I cut the pumpkin into slices and put it in a glass form in the microwave with a couple of tablespoons of water for 12-15 minutes. See for yourself on your microwave. You can also bake in the oven. I cooled the pumpkin, made mashed potatoes with a blender.

  • 2. Dough. I did it with a kneader.
  • He warmed the milk, it should be a little warmer than room temperature. Poured the milk into the mixing bowl.
  • I diluted the yeast in warm milk, they stood for 5 minutes (while I was making mashed potatoes), then I added salt, sugar, eggs, pumpkin puree to the milk, began to mix it all, added flour, kneaded the dough. At the end of the batch, I added butter in pieces. I had to add a few spoons of flour in excess of the norm. The dough turned out to be very pleasant, it did not stick to the hands, it was bright, beautiful and deliciously smelling)))

  • She covered the bowl with a clean towel and sent it to a warm place for an hour. (I have this gas boiler in the boiler room, it is always warm on it!)
  • I wish I had photographed how my dough grew! I almost ran out of the bowl!
  • 3. Forming.
  • Tore off pieces of dough a little more than a walnut, formed buns from them; rolled the balls, then pulled the edges of the dough to the center, while leveling the top surface. The balls were placed on a baking sheet with the seam down. These balls need to be flattened, a depression should be made in the center (I made a depression with the end of a wooden spoon, although during proofing this depression still disappeared from me and before baking I had to make a depression again and insert a nut. Next time I will try to put the nuts right away; they will just rise a little higher, otherwise it was not clear on all my buns that this was a pumpkin tail).
  • It was more convenient for me to make cuts with scissors, here I also need to adapt, I made 5-7 cuts in a circle and 10 mm from the edge without fanaticism, with an average size of a bun (before proofing, cm 4-5 in diameter), it seemed to me that you can make more cuts. Next time I'll try.

  • In the original it was written to leave blanks under the towel for an hour.
  • I didn't have much time, so mine stood for 30 minutes + while I smeared everything with an egg + salt mixture, while I put the nuts, another 15 minutes probably passed.
  • I did 2 portions at once, that's how much I did!

  • 4. Baking.
  • I have a convection oven, I heated it up to 190 degrees and quickly sent all my handsome men there on 3 levels.
  • In the original recipe, the time is 8-10 minutes, honestly, I thought this was not enough, but putting my nose into the oven after exactly 10 minutes, it turned out to be enough time! So look in your oven and stay close to the pumpkins!
  • In general, that's all! I wrote a lot and for a long time, actually doing it very quickly!

These are basically my first self-baked buns in my life! These are the best buns I've ever had!
These are fabulously sunny buns!
From 2 portions, I got 3 trays, exactly 52 pieces!

I really needed an interesting recipe for a general gathering with a large number of children! This recipe prompted me Nadezhda Selena, for which many thanks to her!

Girls, I'm puzzled here. Today I baked it ..... I burst into flames, and now I am in frustrated feelings ... Well, first of all, I'm not a master of yeast dough. The output turns out to be tasty, but it is impossible to achieve elasticity and non-stickiness with manual kneading :-). Well, I got used to this problem in my work :-)
The dough turned out to be very liquid, I added flour a little more than a glass. When forming, the dough was sooooo soft, rolled in flour so that the balls did not stick. And the buns themselves came out all the same a little clogged, I would like to be softer. And the second point - I don't hear pumpkins at all (although I did everything according to the recipe). I read your enthusiasm and think - what did you do wrong? They came out ordinary, well - beautiful, yes, but ordinary rolls. Crying !!!!

Secondly, I am not at all an ace, so I did the proportions strictly from the original source, it even said that flour was needed on the board for dusting - I did not do this at all, the dough was not so sticky, I formed them in my hands and directly onto the paper laid.
The only thing, after mixing in the butter, I added a few tablespoons. I don't know how to knead manually at all, my kneader was in the way. But after proofing it was exactly elastic! In the photo under the towel you can clearly see that I made holes for the nuts and they disappeared right before our eyes.
Maybe the puree was liquid? Maybe this is flour? Maybe oil is like that?

By pumpkin and smell. It all depends on the pumpkin. I had it not very tasty, let's say almost tasteless, but bright orange, in general, in the recipe, as I understand it, color is required from the pumpkin.

After adding butter, I added 4 tablespoons of flour. For 1 kg, 4 spoons seem normal to me. And then I was reinsured. Probably if the kneader was more powerful or made it on 0.5 kg of flour, I would knead it longer and that's it.
