Ingredients

carrot 200 g
walnuts (kernels) 150 g
flour 175 g
sugar in the original recipe / I took 340/200 gr
egg 3 pcs
neutral vegetable oil (grape) 100 ml
baking powder 1 pack 10 gr
salt 1/2 tsp
ground cinnamon 1 tsp
ground nutmeg 1/2 tsp
ground ginger 1/2 tsp
hot water 2 tbsp. l.
For glaze
egg white 1 PC
powdered sugar 250 g
juice of half a lemon

Cooking method

  • Preheat the oven to 180 gr. (I have convection mode)
  • - I rub the carrots either on a coarse grater or with a combine.
  • Carrot cake
  • - I break walnuts into large pieces with my hands or a little in a mortar (half a nut into 4-6 parts)

  • - I sift the flour, add baking powder, salt, spices there.
  • - Beat eggs with sugar until white until bubbles appear. I do it with a kneader at an average speed for 5-7 minutes. There, continuing to beat, add 2 tablespoons of boiling water, then vegetable oil. Then, at a slow speed, I in turn introduce a mixture of flour with spices, then grated carrots, then nuts.
  • The dough is quite liquid.
  • If I bake in a split form, then I grease it with ordinary oil; if in Nordic Ware forms, then grease them with universal grease (1 part oil drain + 1 part vegetable + 1 part flour); If I bake in Tescoma adjustable tins, then I cover the baking paper inside, put it on a baking sheet and pour out the dough, without the paper the dough will run away!
  • Bake 55 minutes, but focus on your oven, check readiness with a match / toothpick (must be dry)

  • - take 250 grams of powder, add one protein and juice of about half a lemon (if large), stir until a thick elastic mass is formed (if not thick, then add powder ...), about 2 / 3 part of the mass put on the cake, level, 1/3 put on the side.

Yesterday I checked it with a search engine, it seems that I did not find an identical composition.

My episodic recipe changes:
Sometimes I partially replace vegetable oil with 50% of my own yoghurt, i.e. 50 ml of butter + 50 ml of yogurt.
Baking powder I take 1/2 sachet.
I can increase cinnamon and ginger 2 times) - it's delicious for me!
I rarely decorate, more often I sprinkle it with icing sugar and that's it!

I have been making this cupcake for a long time, more often in the autumn-winter period, I really love this spicy aroma, even the non-run children who come to visit eat it with pleasure. In the photo, the cupcake was for adults, so the bottom layer was saturated with alcohol, and the frosting on top.
And this is a double portion of cake, with the decoration was impromptu and 5 minutes of free time. I took the glaze in bags.

For me, the cake is sweet and I reduce sugar in it, well, in almost all recipes I reduce sugar, butter, and so on, but again everything is individual here and everything has a place to be.
