Ingredients

For the test:

milk 1st
salt pinch
butter 50gr
For filling:
walnuts 300gr
powdered sugar 300gr
For sugar syrup:
water 2st
sugar 2st
To spread the dough:
butter 200gr
yolk (before smudging before baking) 1 PC

Cooking method

  • Turkish baklava is one of the most famous and popular oriental sweets.
  • Sift flour into a bowl. Add a pinch of salt and stir. Combine milk, melted butter and egg, pour liquid components into flour and knead the dough, knead for 10 minutes. Put the kneaded dough in a bag and leave to rest for 30 minutes.

  • We begin to prepare the filling for the Turkish baklava: Lightly fry the nuts in a dry frying pan.

  • Then roll with a rolling pin. If there is a lot of husk, blow it out.

  • Mix chopped nuts with powdered sugar. The filling is ready.

  • To prepare sugar syrup, add the required amount of sugar to hot water and, when heated, achieve complete dissolution of sugar. Bring the solution to a boil and simmer at a low boil for about 15 minutes.

  • Divide the rested dough into 18-20 equal pieces.

  • Cover the divided dough with a towel to keep it from drying out. Take one piece and roll it out as thin as possible. Brush rolled dough with softened butter.

  • Add 1 tablespoon topped with the filling.

  • Using a thin stick (I used 2 sticks) roll the dough into a roll so that the top is uncovered with the filling. Gather the rolled dough into an accordion. Remove from the stick and tuck the tips inside. You can do it without sticks and it curls so well. Roll out in the same way, sprinkle with filling and roll up any remaining dough. Fold the Turkish baklava on a baking sheet, brush with egg yolk shaken with a tablespoon of water, and put in an oven preheated to 200 degrees for 10-15 minutes.

  • Reduce the temperature in the oven to 160-170 degrees and remove the baking sheet.

  • Grease the Turkish baklava liberally with melted butter, return the baking sheet to the oven and bake for about 50-60 minutes. Fold the hot baklava into a mold and cover with cold sugar syrup.

  • Leave the baklava at room temperature for 5–6 hours (you can pour it directly on the baking sheet if it is tight enough).

Thank you, no, there is no need to level, otherwise it is bad to twist and the edges do not stick together because of the powdered sugar, you pull the sticks correctly and the accordion turns out, and without them it's also good, I just showed 2 ways of twisting.
