Jasmine rice 1.5 cups
Bulb onions 1 PC
Garlic 0.5 cloves
Dried fruits (dried apricots, raisins, prunes) 2 tbsp
Seasoning Biriani Masala 1 tsp

Cashew nuts 2 tbsp
Vegetable oil 3 tbsp

Cooking method

  • Rice Biriani (biryani) in Colombo style
  • I cooked in a small Berghoff saucepan, but you can use a cauldron, a deep frying pan, a stewpan, a slow cooker.
  • Heat the oil, add the onion, cut into half rings. When the onion is browned, add the garlic, carrots, cut into medium pieces. We mix. After a few minutes add salt, biriani seasoning, chili pepper.

  • Fry all this a little. Add dry Jasmine rice and mix well several times. Fill with water and cook under a lid at low temperature.

  • When the water has practically evaporated, add chopped cashews and dried fruits. I didn't have dried apricots and raisins, so I added apples and prunes. This did not spoil the taste! Mix, stick in a cinnamon stick and close the lid. We bring it to readiness. Serve with a slice of lime.

  • This rice can be used as a side dish, but I like it as a separate dish. During my week in Colombo, I ate it several times.
  • Bon Appetit!

Note

Came back from Colombo and was sad. I wrote in my story about Colombo that I had a very strange feeling from this city. Now, when I returned home, in our harsh autumn (and reality), I wanted warmth, kindness, aromas of spices. Therefore, I decided to cook rice according to the recipe that was shared with me in Colombo. Since not everyone can afford meat, fish or chicken every day, this option is cooked in Sri Lanka almost daily.

I have achieved my goal: the aroma of spices warms ... The taste of this dish heals from sadness ...

Tatiana, thank you !!! We must try it somehow.

Know the components of Biriani masala
Babushka
Natalia, Light, Rita, thanks for your attention to the recipe!

A colleague from Colombo shared this recipe. I have seen many other recipes. I tasted biriani chicken for the first time on the way to Colombo. In general, I liked it, but I'm not a meat lover. This option suited me and I decided to share the recipe.

I tried to find the composition of biriani masala. Everywhere they write the composition, but they hide the quantity ...

Ingredients: Cumin, cassia, cumin, black pepper, cardamom, nutmeg, nutmeg, chili pepper, cassia leaves, ground fenugreek, turmeric, cloves, coriander, black cardamom.

Or here: cumin, coriander, cardamom, black pepper, cinnamon, chili, cassia, cloves, nutmeg, turmeric.
Light
50 g butter, a piece of fresh ginger root (2.5 cm), chopped on a grater, 2 crushed cloves of garlic, 0.5 tsp. cinnamon, 1 tbsp. l. coriander, 1 hour l. cardamom, 3 sticks of cloves, 2 tsp. ground cumin, a pinch of ground saffron, 0.5 tsp. ground nutmeg, 1 bay leaf, 50 g of pistachios, 50 g of raisins, a bunch of fresh cilantro. I have so.
Babushka
Light, bravo! Thank you!

thrift, Olga, Thank you! In Colombo, vegetables are prepared with biriani seasoning. Especially the eggplant, which is very interesting there. One type: round, about the size of a tennis ball; another kind: small, like large grapes. Onion, garlic, ginger, biriani seasoning and tomatoes are added to eggplant. It turns out like a stew. The taste is interesting. They also cook fish with her. I didn't like the fish ...

It is necessary to search in tyrnet, we can sell ready-made biriani seasoning.
Painfully I love rice, and already yours, Tanya, it's just a sin not to try!

thrift, Olga, I masala - I make tea
Light, the tea masala has a slightly different flavor. Local people in Colombo explained that only "warm" spices are taken for tea: cardamom, cinnamon, ginger, fennel seeds, black pepper and cloves.
But I am not an expert on Indian spices. Sorry if I'm wrong.
Light
And if you fry chapatis to biriani, then

Babushka, Tatyana, I looked 1 recipe for tea. I thought so. And I decided to do with biriani - masala.
But in fact it is:

2. Half a teaspoon of cardamom
3. Six peas of black pepper
4. Five peas of white pepper
5. Half a teaspoon of cumin (cumin)
6. Half a teaspoon of coriander
7. Ten pieces of carnations
8. Half a teaspoon of nigella (kalindzhi, black cumin)
9. Half a spoonful of caraway seeds
10. And half a teaspoon of the Garam Masaly mixture (completely optional).

Light, it is quite possible that real tea is prepared this way. I was only in Colombo. To my shame I was never interested in this cuisine. And I don't like curry either.

And chapatki will be in place! It is necessary to update the chapatnitsa .....,

Tatyana, cooked rice today according to this recipe, instead of cashews there was almonds (soaked and peeled from brown skin) and liquid extract of Shah Masala spices, Composition: 30% extract of fruits (peas) of black pepper, 25% extract of cinnamon bark, 25% extract of fruits (seed) Cardamom, 20% clove extract. This seasoning is made in India, I hope at least remotely my rice resembled the one that you liked so much I liked it very much, I will do it often, this recipe, for all its simplicity, is very refined or something. thank you very much
