Lavender Coconut Shortbread (No Eggs)

Ingredients

Butter (room t) 120 g
Powdered sugar 50 gr.
Wheat flour 160 g
Salt pinch
Coconut flakes 60 gr.
Lavender flowers (dry) 1 tsp

Cooking method

  • Beat soft butter on a high speed mixer until fluffy. Continuing to beat, add the sifted icing sugar. Then add coconut and lavender and stir with a spatula. Mix flour with salt and sift. Gradually add flour to the butter mixture, stirring with a spatula. The dough should be very soft. Blind a ball out of it. Tear off walnut-sized pieces and roll into balls. Put cookies on a baking sheet, bake in a preheated oven at 180 Cabout about 15 minutes until golden brown

The original recipe contains only 25 grams of powdered sugar. I put 50. This amount turned out to be just right, not cloying, moderately sweet

The photo does not convey the color, and I can not describe it (there is not enough natural light in the kitchen to understand the real color) but definitely not the same as yours, but also very cute. The aroma is for the whole apartment)) The most interesting thing is that the shavings turned out to be 25g, not 30, I poured sesame seeds, but it was not enough - I added 8g of Lavender poppy to a spoon with a slide - why should I waste time on trifles ??? I left the flour as much as necessary, the dough was soft.
