Autumn Blues cake

Ingredients

Biscuit:
Eggs 5 pieces.
Sugar 200 g
Flour 250 g
Homemade yogurt 150 ml
Cognac (or liquor) 30 ml
Vanilla sugar 1.5 tsp.
Butter 50 g
Cocoa 3 tbsp. l. (or according to your taste)
Baking powder 1.5 tsp.
Cinnamon (if you love) 1 tsp incomplete
Cream:
Cream 33% 150 ml
Boiled condensed milk 0.5 jars
Impregnation:
Sugar 60 g
Water 70 ml
Cherry jam syrup 3 tbsp. l.
Martini 30 ml
Sea buckthorn mousse:
Sea buckthorn 280 g
Cream 33% 300 ml
Gelatin 1.5 tbsp. l.
Sugar 100 g
Egg yolks 4 things.

Cooking method

  • Biscuit:
  • Separate the eggs into whites and yolks.
  • Sift the flour and mix with baking powder, cocoa and cinnamon.
  • Turn the oven to 180about FROM.
  • Melt the oil.
  • We cover the detachable form with parchment paper (I cover both the bottom and the sides, and you do it as you are used to).
  • Beat the whites with a pinch of salt until they fall out of the bowl if you turn it over, and leave it alone for now.
  • Beat the yolks with sugar and vanilla sugar until fluffy, add yogurt, brandy, beat a little more.
  • Then add one third of the whipped proteins, mix from bottom to top, then add the flour mixture, mix. Now carefully pour in the melted and cooled butter along the edge of the bowl, mix, add all the proteins and finally mix.
  • Place the dough in a mold and bake for about 45 minutes (of course, coordinate the baking time with your oven). We check for readiness with a wooden stick. Cool, cut into three cakes, each of which we soak with syrup.
  • Impregnation:
  • Put sugar and water in a saucepan, wait until it boils, then cook for another 3-4 minutes. Cool, add cherry syrup and alcohol. If the cake is for children, add alcohol while the syrup is cooking.
  • Cream:
  • Whisk the cooled cream until soft peaks. Then whisk the condensed milk, gradually adding cream there. So you can make a cream of exactly the consistency you like, having determined to your taste what should be more in it: condensed milk or cream :) My cream was cappuccino color ... oh, let's not get distracted, but it was delicious :)
  • Sea buckthorn mousse:
  • Soak gelatin in water.
  • Rinse the sea buckthorn, dry it, puree in a blender and rub through a sieve.
  • In a saucepan, mix sea buckthorn puree, sugar (for some reason I had powdered sugar, I was showing off, probably :)) and four yolks. Warm up until the sugar dissolves and then over low heat with constant stirring (!!! - don't say that I didn't warn you - stir constantly) cook until thickened (it took me 4 minutes). Cool down.
  • Beat the cream until soft peaks (personally, I am always sooooo afraid to interrupt them, so in this place we are not distracted by conversations, persuasions and negotiations and do not even respond to marriage proposals :)))
  • Then I did this: I dissolved the gelatin in the microwave (30 seconds), added it to the sea buckthorn Kurd cooled to 50 degrees (yes, yes, that sour and tasty smelling thing that happened in your saucepan is called a Kurd) and cooled it to room temperature and then mixed with whipped cream. Everything, further is a matter of technology :)
  • Assembling the cake:
  • In a ring (which one you have: either a special detachable one, or from a form, or improvised from foil), put the first cake - soak with syrup - coat with cream - put the second cake - soak with syrup - pour out the mousse - put the third cake soaked in syrup with sides (I forgot, soaked on top). Put in the refrigerator for 3-4 hours (I have a night)
  • Decorate to your taste (I had the second rehearsal of protein custard, don't judge strictly :))) and finally, to all the suggestions made to you, you happily answer: \ "Yes \" :)))
